Chicken Supreme III

Reviewed: Aug. 1, 2004
I had the same issue other reviewers complained of with the recipe being a little on the salty side. I used low sodium chicken broth, but that didn't seem to matter. But the dish was tasty and I will make it again.

Hot Fudge Ice Cream Bar Dessert

Reviewed: Jul. 11, 2004
This recipe has already become a favorite at our house. It is a wonderful dessert if you are working with little chefs as there is no real heat involved. I don't make any changes, other than maybe to increase the number of ice cream bar used. It may just be the brand I use is smaller. Really, the dessert is much more impressive than it should be since it is so simple, but even the pickiest of critics give it rave reviews at our house.

Chicken Enchiladas I

Reviewed: Jul. 11, 2004
I really liked the filling in this recipe, but the taco sauce just didn't work well. If I make again I will use enchilada sauce. I didn't really make any other changes to the recipe though and like I said, the filling is great.

Spanish Rice II

Reviewed: Jul. 11, 2004
What an easy Spanish Rice recipe. It was much better than the stuff from a box. The only change I made was to use a can of tomatoes and a can of green chilies (I didn't have a can with).

I used this on steaks. It was good, but really nothing stood out to make me say it was excellent or a huge hit.

The Works Steak Burger

I really only thought these were okay. I couldn't really taste anything special about this and for the amount of work probably won't bother again.

Cream Puff Cake

Reviewed: Jun. 6, 2004
Talk about simple and easy. I followed other reviewers suggestions and made two 8x8 pans and baked for 20 minutes. I also used a dark chocolate frosting that I heated slightly in the microwave as the first layer. I think it really needed the extra. I used French vanilla pudding and Hershey's syrup to finish it off. The cake was a huge hit and tastes just like a cream puff. It was fun and easy and I will keep in mind for the next time I need a desert.

Chocolate Eclair Cake

Reviewed: May 30, 2004
This has long been a family favorite at our house. Super easy to make the taste is very similar to an eclair. Of note, letting the cake sit over night is a must. The cake is so much better when the crackers get soggy and mushy.

Awesome Roast Beef

Reviewed: May 19, 2004
Good simple and easy pot roast recipe. I seasoned the meat with salt, pepper and garlic powder before browning and putting in the crock pot. Then added sliced onions and the can of soup. I used 1 cup water and 1 bulion cube to deglaze the pan before adding to the pot. The meat turned out tender and flavorful. The gravy was perfect, not too runny or thick. I added carrots and celery about 4 hours prior to serving.

Sweet and Tart Strawberry Salad

Reviewed: May 8, 2004
You really need a good quality balsamic vinegar with this dish. I allowed the strawberries to saok in the sugar for a couple hours before serving. Add the vinegar and pepper only just before serving or they will not add any flavor.

Not a big hit at our house. All we really tasted was the orange juice and we won't make it again.

Grecian Pork Tenderloin

Reviewed: May 8, 2004
I made this for dinner for my parents. My father and I really enjoyed the dish. My mother however complained about both the strong citrus flavor and the oregano flavor. So I suspect the rule should be don't make if you don't like citrus or oregano. It doesn't take long for the marinade to saturate the meat.

Italian Spaghetti Sauce with Meatballs

Reviewed: May 8, 2004
I was leary of making this without first pre-cooking the meatballs, but this is by far the best spaghetti and meatballs I have ever made. The meatballs ended up a nice brown color, they were not over cooked and I think putting them in before browning allowed some of the meat flavor to seep into the sauce. I great recipe.

Pastachutta

A nice simple pasta dish. I left out the onions however and used olive oil rather than butter to lighten the calorie and fat content. It makes a nice light dinner or a wonderful side.

Sesame Lime Steak Wraps

We made this recipe without any substitutions and thought it was just wonderful. The meat has a unique flavor that I could see not everyone enjoying, but it was a hit for us. The flavor is a bit more asian than I expected, but it worked perfectly.

Sweet & Spicy Snack Mix

I made several batches of cereal mix. This was the first one eaten. It wasn't very spicy and next time I would increase the amount of pepper. Overall though, the flavor was good and have a slightly sweet under tone.

Apple Pie Bread

Reviewed: Mar. 21, 2004
Wow! Talk about great fun bread. My grandmother even asked me for the recipe. I replaced the cinnamon and cloves with apple pie spice and the bread taste was perfect. I however took it out too soon and was a little gummy in the middle. I will turn the oven down an additional 25 degrees next time as the outside was over done and the inside gummy.

Chocolate Waffles I

Reviewed: Mar. 21, 2004
These were fun for breakfast. As other reviewers stated, but waffles don't really get crispy, but stay chewy. We froze the extra and popped in the toaster for breakfast during the week and those got crispy though. I didn't bother with the sauce, but using fresh fruit, jam and syrup. If you are looking for something different, give these a try.

Easy Garlic Ginger Chicken

Reviewed: Mar. 21, 2004
This is one of the easiest and most flavorful recipes I have ever made. Warning: if you don't like the taste of lime do not make this recipe though. The lime taste is very strong. I usually prefer to marinade my meat over night or longer if possible, but decided to grill chicken at the last minute. This recipe was perfect, marinade any longer that 20 minutes and the acid from the lime juice will start to cook the chicken.

Pasta with Asiago Cheese and Spinach

Reviewed: Mar. 21, 2004
This is a great recipe that has good taste and best of all has very little fat. I used pena, but I think it would be great with just about any small pasta or even tortellini. The only thing that I was surprised about was the spinach did not wilt much, but that was not a problem.
