Baja Stuffed Potatoes

Great twist on stuffed potatoes. I didn't have any Mexican corn so used regular. I subbed light sour cream and cheese to make a little healthier. I also made ahead of time and just baked for 30 minutes to reheat.

McCormick's Beer Can Chicken

I think it is pretty much impossible to screw up beer can chicken. This was great though. The spice added a great extra flavor to the chicken. My brother taught me to stuff a potato, onion or lemon in the neck of the chicken. This steams the chicken better and really keeps the breast meat moist. I actually over cooked mine (to 190) and the meat was still moist and juicy.

Roasted Potato and Garlic Salad

Excellent recipe. I have made a couple of times now. I did reduce the amount of oil and don't think it negatively effected the taste at all. I also used jared red peppers rather than roasting them fresh.

Asparagus with Parmesan Crust

Very good. I prefer the roasting to steaming. The balsamic adds a nice little flavor at the end. I forgot to add the parmesan and still enjoyed the dish.

Brown Sugar Pound Cake II

Good pound cake recipe. I didn't have maple extract so used vanilla. The cake had a good texture and flavor. The glaze on top was really great. We served with strawberries and whipped cream.

Cake Mix Cookies V

I liked these, I made then with pecans. My husband who doesn't like nuts in his cookies liked them. they were a nice change from the regular cake mix cookies I have been making.

Cheesy Baked Grits

These are good, but I have had better baked grits recipes so I didn't give them five starts. I reduced to 4 servings and baked in a 8 inch loaf pan. I also used fat free milk and 50% low fat cheese, I forgot the parmesan. The grits do have a firmer texture than they normally would and they were great where the outside and top got crispy. My 4 yo who loves cheese grits wouldn't eat them though because she didn't like the crunchy parts (where I thought they were best). My husband refuses to even try grits. He took a bit of these and said, he would eat them again. However, he still ate a baked potato for dinner rather than the grits. I will probably continue to look for another recipe though.

Banana Chocolate Chip Dessert

My husband and daughter both really liked this. I do not eat bananas so did not try it. This is a great way to use up those over ripe bananas when you are tired of banana bread. I used the jelly roll pan as the recipe is written, however since mine was dark I decreased the cooking temp by 25 degrees. The dessert came out moist and spongy according to my husband. My daughter who is picky ate two pieces.

Applesauce Barbeque Sauce

We really liked this sauce. It is sweet, and if you like sweet barbeque sauces chances are this one will be a hit. The only change I made was to decrease the sugar by half. Since I used a sweetened applesauce this worked well.

Special Cereal Bars I

WOW! These are so much better than rice crispy bars it isn't even funny. I used a combination of cereals I had left over including Kashi Mighty Kids and chex. These are beyond addictive. I didn't have any trouble cutting them thanks to the suggestion another reviewer gave to remove the corn syrup mixture quickly.

Cake Mix Cookies VI

I think so far this is my favorite cake mix cookie recipe. It however is a little more work than some of the others that I like to make with my 4 year old daughter because they don't require any measuring. The only change I would make would be to cut the chips back to 1 cup.

These are simple and easy to make. I followed the recipe as written and thought they were a great hit. Because I am not a coffee fan I used the amount of coffee called for. Even a non-coffee drinker will like them.

Cake Mix Cookies VII

I have tried several cake mix cookie recipes in an attempt to find the one I like the best. This one is definately at the top of the list. The baking power makes the cookies puff slightly and I like that.

I have also tried Cake Mix Cookies I and III, they were both good, but so far these are my favorite. The dough is easier to work with not too stiff or crumbly. The cookies turned out nice and moist and they spread some without being too loose.

This was a good start. I roasted my potatoes rather than boiling them. I also roasted the onions at that time. When I mmixed the salad I used fresh oregano rather than dried and added some roasted ret pepper strips. Today I had the left overs that I heated up and felt it was much better warm than cold.
