Roasted Garlic Cauliflower

A great healthy way to add flavor to cauliflower. To lighten the dish further I reduced the olive oil by half. The only problem I had was my garlic burned. I am not sure how to stop that. But the roasting added a nice touch of flavor to the cauliflower when compared to just steaming. I will play with the seasoning, but this is a definate make again at our house.

Bacon Roasted Chicken

This was wonderful. Instead of beef broth I used 1 cup chicken broth, and a little less than a cup of orange juice with about a quarter cup of balsamic vinegar. I stuffed the cavity with onion rather than carrots and used Paula Deen's house seasoning to season the bird. The bacon on top was to die for and my husband and I ended up fighting over it. The sauce was a little sweet with a slight citrus flavor thanks to the orange juice. I boiled it down slightly and thickened with some cornstarch and water. I will make this again for sure.

Stuffed Mushrooms

We just didn't care for these. While I loved the idea of a low fat stuffed mushroom the balsamic vinegar taste overpowered everything. My husband who loves mushrooms didn't even eat his. I considered taking the Balsamic out, but then worry they would have no flavor.

Loaded Potato Soup I

Baked potato soup is a favorite at our house. It is always the first soup I make of the year. I try to use left over baked potatoes to save some time. I also like to mash some of the potatoes and leave some chunked to get a better consistency.

Kathy's Delicious Whole Slow Cooker Chicken

This was my first attempt at making a whole chicken in the slow cooker. I was rather nervous, but it was very good. I will say though, it is difficult to skin a whole chicken. I cooked my chicken on high for 3 hours then let it sit in the warm setting for another 30 minutes while I finished dinner. The only complaint I had was it was slightly dried out, not to the point of being inedible, but it was dry. This however could be due to my slow cooker as it over cooks everything. I only put in about a tablespoon of olive oil, as it was all I had. I also used the juice of half a lemon, I am not sure what it measured to. I cooked the chicken with the breast down and based the back about every 30 minutes. I reduced about a cup of the liquid from the chicken for a gravy, that I served over mashed potatoes. The sauce has a slightly oriental flavor, although not strong, with a hint of citrus. It was very good. I really liked it as did my husband and daughter. We also had with broccoli and salad.

Easy Slow Cooker French Dip

This was wonderful and I know I will be making it again. The sauce for dipping is perfect with just a hint of the beer that isn't overpowering. The only thing I will change next time is to add onions.

Easy and Quick Swiss Steak

This was okay, but I didn't find it spectacular. I had way more gravy than I needed for the amount of meat I used. I found the sauce to be somewhat bland, even after adding garlic and a bay leaf.

Amazing Greek Pasta

My husband said this was "interesting" but he liked it a lot. I added Feta to the sauce and tossed with penna. The sauce was a little salty, so be careful about adding too much salt to your pasta, it however was very good and we loved to sop up the left over with bread. I only simmered about 30 minutes, but don't feel it caused the taste to suffer at all.

Barbeque Sauce I

This was a good vinegar based sauce, however I used it on chicken. I think it would have been much better on pulled port. Because it is so tangy it has more of a pulled pork flavor. I will try again the next time I do pulled pork.

Creamy Polenta with Roasted Corn and Fresh Sage

Thai Beef Salad

This recipe is good. I left my meat rare and I wish I had left it a little more rare as the acid in the marinade cooks the meat further. Mine ended up well done by the time we ate. I didn't have any fish sauce, so I used soy sauce instead, it ended up a little sweeter because of it I think. Also, I added a tablespoon of spicy chili sauce, but really wish I had added more, it wasn't very hot. Other's recommended red curry paste and I wish I had tried that. I also didn't have enough mint so only added about 1/4 cup, but I still felt it had a very strong flavor. I would be leary of adding a whole cup. Over all, a very nice recipe. I think it's strongest feature however is the fact everything can be made ahead of time, so all you need to get dinner on the table is five minute to assemble. Perfect for nights you are home late.

Waffles I

Good basic waffle recipe. Nothing really wowing, but a great recipe for when you do not have mix on hand. They are easy to make and I typically stock all the ingredients. The waffles came out fluffy and moist.

Campfire Vidalias

Very good. I drizzled the onion with olive oil to make them slightly healthier. While the flavor was similar to a Blooming Onion without the breading I would have liked a little more something. To keep them healthy but add more flavor I think I will add a little balsamic vinegar next time.

Company Cauliflower

Polenta Fries

This was the first time I have had polenta. My husband and I found it to be very bland. I grilled the sticks after they set up rather than deep frying. I am sure deep frying would have added flavor, but I was concerned about the fat.

Divine Spaghetti Sauce

Good sauce. I like the flavor the vegetables add to the sauce and cooking all day is the key. To save time and pans I cooked my beef then added it to the totatoes and tomato paste in the crock pot. I then used the same pan to cook my vegetables. I put the fresh basil and some fresh oregano in just before serving.
