Bread Pudding II

This was a good base recipe. I made some alterations for my family: 1 c. Rapadara instead of the sugar, apples instead of raisins, 4 eggs, 1 t. cinnamon and some fresh ground nutmeg. For economy's sake, you could probably reduce the vanilla by half and still be fine. Recommended!

Blackberry Cobbler II

Simple and yummy! I used 1/2 c. white whole wheat flour, only 1/4 c. sugar in the batter, and scant 1/2 c. honey in the berries in lieu of sugar. Next time I would try 1/3 c. honey. No need for the foil lined baking sheet with my cast iron skillet.

Easy Batter Fruit Cobbler

I made this with fresh blueberries, and it was easy and delicious! I only used 3 T. butter and I omitted the sugar on top. I also used 1/4 c. whole wheat white flour and 1/4 c. honey, and it turned out plenty sweet and tasty. I baked it in a 9" pie plate and it filled it quite nicely. I would definitely bake this again and try different fruit combinations.

Whole Wheat Blueberry Pancakes

This is a very good whole wheat recipe. The batter "held" the berries quite well. I used 2 T. agave instead of the artificial sweetener as well as twice the blueberries. I also added a splash of vanilla and sprinkle of cinnamon. The note recommends using up to 1/4 c. more milk, and I felt that was needed. For my family, I then doubled the whole recipe and used 1/2 c. batter per pancake. Thank you for sharing!

Blueberry Oat Cookies

Good flavor, but mine were overly moist and literally falling apart. I think this is because I only had old-fashioned oats to use. If I made this again, I would either use quick or double the amount for old-fashioned oats.

Blueberry Zucchini Bread

Moist, tasty, and healthfully adaptable! I used applesauce + 1 T. oil, 1/2 white ww and 1/2 ww pastry flour, banana and flax instead of the eggs, and reduced sugar to 1 1/2 cups. It was plenty sweet, and next time I would reduce the sugar even more. I also cooked it in two regular size loaf pans for about 50 minutes.

Oatmeal and Wheat Flour Blueberry Pancakes

I used only whole wheat flour, applesauce instead of oil, agave instead of sugar, a splash of lemon extract, a shake of cinnamon, and doubled the fresh berries. I also only had two eggs and old-fashioned oats. I found the inconsistent texture (both lumpy and runny) difficult to work with on the griddle. Quick oats would have been smoother, but I still think grinding the oats in a food processor would have been best. I would also add the berries directly on the griddle instead of mixing them into the batter. Good taste, but with all my alterations I can only give 3 stars!

Health Nut Blueberry Muffins

Good muffins! I successfully adapted the recipe to our tastes and what we had on hand. I used 1/2 whole wheat and 1/2 whole wheat pastry flours (no white), agave nectar instead of sugar, wheat bran instead of oat, unsweetened applesauce instead of banana, pecans instead of walnuts, and flax meal instead of oil. Good taste and texture. I will make these again!

E-Z Drop Biscuits

These were easy, and the whole family loved them with the following alterations. I used 1 cup whole wheat pastry and 1 cup white whole wheat flours. I substituted applesauce for the butter and omitted sugar ~ this requires greasing your pan a bit more to prevent sticking. I also added some chopped scallions and a handful of shredded cheddar. Excellent flavor and texture!

Wheat Germ Whole-Wheat Buttermilk Pancakes

This recipe has the most "normal" pancake texture of any whole wheat recipe that I've tried. I substituted applesauce for the oil and baking powder for the soda, and I added some cinnamon and vanilla for flavor.

Black Bean Spread

Simple, healthy, and liked by the whole family! I don't use hot sauce, so I added an extra T. of salsa. I didn't have green onion, so I just omitted it. Pureed in the bowl with my immersion blender. Served with tortilla chips.

Cottage Cheese Bread I

I had a lot of cottage cheese in the fridge and decided to try this recipe. I usually only make whole wheat breads, but not knowing how it would turn out I only substituted whole wheat flour for half of the bread flour ~ No problem at all! I also used butter, only 2t. yeast, and added 1T. of wheat gluten. The bread rose perfectly to fill the pan without overflowing. The texture of the bread is soft and spongy, and the flavor has a bit of tang. I may try this again with all whole wheat flour and see what happens.

Brown Edge Cookies

I had a bunch of cottage cheese in the fridge and decided to try these. I used regular unbleached flour, butter, and almond extract. I was a little worried because the batter seemed sort of liquidy ~ But they came out quite good! Cake-like texture, nice brown edge, and great flavor! Make a double batch, as a single only fills one cookie sheet.

Easy Sausage Strata

This is a good base recipe. I chopped an onion and large clove of garlic and browned them with sausage, adding some rosemary and hot peppers as well. Rye bread also added flavor. Reduce or eliminate salt. You could also eliminate the sausage and substitute more veges, such as broccoli. Worked well in my 8x11 pan.

Good tasting, but very small and dense. I even added gluten for a better rise. I doubt I will make this again. Use the "light" crust setting if you try it.

Whole Wheat Bread III

I absolutely loved this recipe. You could easily reduce the honey, as it is quite sweet for everyday bread. My 8 year old, however, did not like the cornmeal texture. I have also made it with oatmeal and molasses instead of honey and cornmeal. Add some gluten (available at health food stores) for more rise and more protein.

The Best Vegetarian Chili in the World
