Harvest Pumpkin Cupcakes

These are SO good, moist and YUMMY! The frosting was kinda moist though, so next time I am gonna try putting it in the fridge to stiffen up before frosting the cupcakes. The recipe make 22 large cupcakes. I made half a batch of frosting and it frosted all the cupcakes with a little left over.

Sauteed Mushrooms in Garlic

Made these tonite on the side of our grilled steaks. So good, I wish I'd made more! Only thing I did differently was add a little bit of kosher salt. Thank you Amanda for sharing!

Breaded Chicken Fingers

Made these the other nite. We (hubby & kids & me!) LOVED them! I used Panko bread crumbs, made them extra crunchy! And spiced up the crumbs alot! They were crunchy on the outside & so moist on the inside. Thanks for sharing this recipe!

Spinach Stuffed Chicken Breasts

I've made these several times, they are SO good! A few changes; added salt, pepper & a bit of onion powder to the filling. Also I marinated them overnite in a Roasted Red Pepper Italian Dressing, it added SO much flavor. Delish! Thanks for sharing this one, the whole fam loves it! :)

Mushroom Pork Chops

oh my gosh! this was SOOOOO good. My whole family loved it & the sauce over jasmine rice was YUMMY! I added some crushed garlic to the onion/mushroom saute. I also took some others advice & added a half can of milk to the soup. Next time I will make 2 cans of soup for some EXTRA sauce. The kids wanted 3rds,but we'd run out of sauce. A big thumbs up for this super easy & delicious meal. Thanks for sharing! This will defintely be made again.

Salisbury Steak

Made this SO many times, made it again tonite & just wanted to say again that its GREAT! I made a new change to it this time (previously I omitted the ketchup because its makes it to sweet for my taste. I've also always double the sauce) but this time I used crushed RITZ Crackers in place of the bread crumbs & OOOH LA LA were they even BETTER & so much more tender. Thanks again for this keeper!!!

Barbecue Ribs

These were a HUGE hit with my family! I just got done eating 5 ribs & we all agree they are the best ribs I've ever made. I did make a few changes. I added meat tenderizer, onion powder, & pepper before I put them in the oven. For the sauce, I added onion powder & a little bit of hot sauce, omitted the chili sauce (because I didn't have on hand) & only used about 1/2 cup of brown sugar. Someone else said the sauce wasn't as thick as they'd liked. While they were on the grill, I put the remaining sauce on the stove with a little bit of cornstarch & thickened it up, before basting the ribs. If you want good ribs, give these a whirl! You won't be disappointed!! YUMMMMMM

Mouth-Watering Stuffed Mushrooms

I made these for our Valentines Dinner this year & my boyfriend thought they were GREAT! So did I, by the way. I've made them several times since then. I too cut down the cream cheese to half, & added bread crumbs. I also added cooked, chopped Shrimp. Mmmm, Mmmmm GOOD!

Chocolate Chip Cookies for Special Diets

I made these today, for my Diabetic Grandpa. I'm sending them to him for Valentines Day. I tried them, as well as my 3 kids & my boyfriend. We all liked them & thought they were good for having a sugar substitute. I used Splenda like some other people, due to the fact that it has no bitter after taste. I baked them at exactly 10 min & they came out nice & chewy! Thanks for helping satisfy my Gpa's sweet tooth!!

Rempel Family Meatloaf

I made this last nite & it was GREAT! SO MOIST & GREAT flavor. The only thing I did differently was to add ketchup on top during last 15 min. of baking. It was a HIT in my family!! From the 18 month old, to the 12 yr old, to my boyfriend!! Not to mention, ME! Definitely a keeper! Thanks!! :o)
