Healthy Garden Salad

This was a HUGE hit!! This was absolutely wonderful. I loved this salad. I made it exact, but I liked the suggestion of adding red onion. I will do that next time. I might add some more veggies too, like zucchini. But, it was spectacular and I've now added it to my cookbook!!!

Peanut Butter Bars I

What an unbelievable recipe!!! This was SOOOO easy to make, and it was incredibly good. I didn't have graham cracker crumbs (pre-done). I used my amazing Vitamix and it used about two packages of graham crackers ground up. Each package seemed to make one cup of crumbs. Will make this again and again. This is going in my cookbook, for sure!!! The only thing that confused me on this recipe is the serving of 12… This made WAY more than 12 bars. To get 12 bars, you would have to cut these into enormous bars… I made decent size squares and it came out to be about 42 squares.

Lime Cilantro Rice

Wow!!! How super easy is this!! I didn't really measure what I was putting in, so it was just the juice of one lime (that seemed to be really, really juicy). Omitted the lime zest. But, it was SOOO easy and VERY good. I didn't add the tablespoon of margarine in with the rice, and I felt the rice was lacking a flavor, and that was it. I will make sure to do that next time (got the wife's permission to do so; normally, she doesn't like that in anything). Will make this again in a heartbeat!!!

Chantal's New York Cheesecake

Wonderful recipes. I made this in our Vitamix blender to get the batter done, and it came out wonderful. Instead of the graham cracker crust, I used a cup of almond meal. I probably needed more than a cup (I'll possibly even double it next time to give it a slightly thicker crust), and I needed more than the 2 tbsp of margarine. That needs work. But, the cheesecake itself came out wonderful. I left it in the oven for 5 hours after I baked it, then fridged it overnight. It was wonderful. Will make it again.

Cinnabun Cookies

This recipe was good, but one change I made needed me to do lots of tweaking, and I'll have to re-do the recipe. I didn't like the thought of using shortening, let alone butter-flavored shortening. So, I used a half cup of applesauce instead. Well, it added too much liquidity, and after leaving the dough in the fridge for an hour, the dough was WAY too doughy. We had to add a lot more flour to it, and as a result, the dough didn't have as much flavor as it could have. So, with some tweaking, this could be a great recipe.

Spinach and Orzo Salad

Turned out great. As per someone else's suggestion, we added marinated artichokes chopped up and chopped olives, and it added to the flavor. It was spectacular. I might add more veggies to it to make it even healthier, but it was a great salad.

It was a good recipe, but a little bland. Next time, we need to add seasoning to it to give it some flavor. Otherwise, it was a great recipe. Needs some tweaking.

Black Bean, Corn and Turkey Chili

This was spectacular and SUPER easy. My wife is vegetarian, and so instead of turkey, I used Morningstar crumbles. Couldn't tell a difference (well, kinda; ground turkey still would have been better) ;-) But, otherwise, didn't change a thing. It was wonderful. My one year old loved it, too. WIll make it again in a heartbeat!!

Sean's Falafel and Cucumber Sauce

Falafel, not so much. Tzatziki sauce, very good. So, we tried to make the falafel, and it just didn't work. Even though a small part of it not working was us doing it on the George Foreman Grill (as one reviewer suggested) to cook, the taste was what killed it. It wasn't horrible, but it tasted more like a fake Stove Top Stuffing than it did actual falafel. Wasn't our cup of tea. However, we did make the Tzatziki sauce, and it was wonderful. I will use the abundance of leftovers (we made more than just a 6 oz cup of yogurt) with Gyros tomorrow.

Lower Fat Banana Bread II

Absolutely amazing recipe. We made a few minor adjustments, which actually made it healthier. We substituted brown sugar for white sugar, and instead of a cup and 3/4 of flour, we used 1 cup of whole wheat flour and 3/4 cup of white flour. It came out spectacular. We added a touch more vanilla, too, and we upped the bananas to 3. It was a great recipe. Will make it again (in fact, we're making a second loaf tomorrow).

Ginger Glazed Mahi Mahi

EXCELLENT RECIPE!!!! I didn't follow the directions exactly because I TOTALLY forgot to marinate this for 20 minutes prior to cooking. OOPS!!! Next time I will because I know it will taste even better if I do. I did follow the recipe exact and didn't double anything. I might add a bit more ginger, but it was perfect. I even used the sauce to saute vegetables. It was great!! Will make this again REALLY soon.

Zesty Slow Cooker Chicken Barbecue

EASY and REALLY GOOD. Will enjoy trying it with an even better barbecue sauce. I used Bulls Eye with Guinness. It was excellent!!! Super easy to throw together. Update: It was really good the first day, not so much the second. Leftovers the next day didn't taste nearly as good. Gets a star knocked off for that.

Best Marinara Sauce Yet

I've now made this a few times. It's absolutely wonderful!! Quick, easy to prepare, and just let it simmer for 30 minutes, and you have a great sauce. I used it as a pizza sauce, and it was wonderful. Used the leftovers for spaghetti, and it was great there, too.

Coconut Ambrosia Salad

This was excellent. I've made it three times now, and it's been great!!! The first time I made it by the book, but the next time, I made it with a small package with banana pudding mix in it, and it added a lot of flavor, as well as adding a can of fruit cocktail to add a better variety of fruit to it. It is a great recipe!!!

This recipe is absolutely fabulous. I omitted the bacon and the garbanzo beans (since garbanzo beans just don't seem right in baked beans) and doubled the pinto beans to compensate. I've made this a few times. It's wonderful. Moved now to my cookbook.

Cajun Skillet Surprise

This was excellent. I found that all the meats could be precooked. Pre-cooked sausage (like using Hillshire Farms sausage), precooked shrimp, and cooking the chicken ahead of time all wouldn't have affected this recipe. But, I enjoyed this over rice, and it was spectacular. Will make it again.
