Buffalo Chicken Dip

I decided to make it lower in fat and calories so I used one package Philadelphia brand fat free cream cheese, one pacakge light cream cheese, fat free Ranch dressing and Kraft 2% milk shredded cheddar cheese. I didn't tell my husband that it was "light" before he dug in and raved how wonderful it was. That endorsement meant you can't tell it's lower fat/cal so I will definitely be making this again with those modifications. Give it a shot! Totally addictive!

Chicken and Artichoke Minestrone

One word: DELICIOUS! I didn't have mushrooms but didn't miss them one bit. I had a can of quartered artichokes which seemed too big so I chopped them up. I didn't want to have soup with huge chunks plus I was 'hiding' them from my husband who says he doesn't like artichokes. Served with some hearty bread and he and I both absolutely loved it even after I fessed up to the ingredients! I used frozen corn and fresh spinach. Can't wait to eat the leftovers already!! Thanks for a great soup recipe that I plan to use regularly!

Black Bottom Cupcakes II

I love these!!! And yes, I add the vinegar. I have no idea what it's purpose is or what it's for (maybe ask Alton Brown haha) but these are just fabulous. I wouldn't change a thing. These are the best of the black bottom cupcake recipes on this site!!

Black Pasta in a Pink Gorgonzola Sauce

I put so much effort into this dish and I wasn't really thrilled about it. I went to what seemed like a zillion stores to find squid ink pasta so I went with spinach fettucine noodles. The sauce was expensive between the gorgonzola and prosciutto and wine. Anyway, after it was all said and done, I served it to my husband who was just as excited as I was to try it. I think the gorgonzola was too overwhelming. Sorry.

Amy's Cilantro Cream Sauce

You have to try this recipe! My only alteration was adding 2 roasted garlic cloves but it would be just fine without it. I also didn't have celery salt so I used a dash of regular salt. I found a 16 oz jar of Salsa Verde by Pace in the international section of my grocery store which has jalapenos in it so it added a nice kick (I used about 1/2 the jar)! I served it with carrots, celery and pita wedges. Everyone loved this dip and couldn't stop eating it. I can't wait to make it again!

Jalapeno Popper Spread

I was very skeptical of this recipe especially when I scoured the grocery store looking for "canned" jalapenos. So I bought a 12 oz jar of pickled jalapenos and a 4 oz can of diced green chiles. I drained the jalapenos and put about 1/2 the jar in the food processor to chop them. Mixed as directed, scooped it into a 9" pie plate, topped with real Parm cheese and sprinkled panko bread crumbs on top and baked 375 for about 30 minutes or until nicely browned. Even out of the oven, I was worried it wouldn't be good but BOY was I wrong! Tastes just like a popper and perfect amount of heat to it! It got rave reviews!

Bacon Quiche Tarts

I made these in a mini muffin tin so with the biscuits, I split them in half and even cut them smaller to fit in the bottom. Because of using mini muffin tins, you have to keep your eye on them as you have to adjust time. I used shredded sharp cheddar cheese instead of swiss. There were none left and I made a double batch!

English Trifle

This dessert will bring ooh's and aah's wherever you take it. It's beautiful and easy. First off, I don't make the cake - buy a pound cake or angel food cake! I do use a egg slicer to slice the strawberries. I don't use bananas with OJ nor the cherries or almonds. I top it with a few neatly placed strawberries. Excellent!!! I never thought I'd ever have a use for my trifle bowl but this recipe keeps it busy!

Red Enchilada Sauce

Do not be intimidated by making your own enchilada sauce! This is so easy and a zillion times better than the canned stuff. I follow the recipe to a T and it is just the best. I wouldn't change a thing!

Key West Penne

This is an excellent easy dish! I loved it and so does evereyone I've made this for. I used all shrimp. I omitted kalamata olives I don't feel I lost a bit of flavor. Instead of the sun dried tomtotes, I used a sun dried tomato pesto that adds a great touch. I just threw in a few spoonfuls of the pesto while cooking. This is a regular in my dinner rotations!

Ham and Cheese Breakfast Quiche

I have used this recipe several times. The latest time, I made it for a work pot luck. I used a 30 oz bag of Oreda shredded hash browns, defrosted and mixed them with melted butter then pressed it into the bottom and sides of 9x13 pan. I baked it for 25+ minutes til edges were a bit brown. I refrigerated the crust overnight. Since you can use any filling, I used about 1 1/2 cups cooked sausage instead of ham plus lots of monterey jack cheese. I used 6 eggs and about 1 1/2-2 cups of half and half. I poured that in the next morning and baked 30 mins. Next time I might add some green onions with sausage. Ham was good when I used it before but sausage went over well. Just depends on your preference. Thanks for a great, easy recipe!

Hershey's ® Gridiron Cake

What a hit! I'm giving it 5 stars for the decorating idea because I didn't make the cake. I cheated by ordering 1/2 a sheet cake and asked them to ice it in light green to save me some time. My husband wanted to help so we decided to use Rolos and Reeses so that he could write the numbers of the players on them. We turned the Rolos upside down so there was more room for the numbers. I made the football out of two choc chips held together with icing and placed the ball on Donovan. I sprinkled some green crystal-like sprinkles in the end zones then wrote Eagles in green and Patriots in red. I couldn't figure out the Kit Kat OR the Twizzler goal posts but used another person's idea and melted choc chips, put in ziploc, cut off tip and "draw" goal posts on wax paper and freeze. I didn't put them in the cake until ready to serve. It looked awesome!

Cheese Filled Triangles

Wow are these wonderful! Huge hit as a Thanksgiving appetizer. Glad I tried to start them the night before because I didn't realize I had to THAW the phyllo before making them. Duh! I cooked them on a stone and they turned out perfect. Can't wait to make them again!

Easy Garlic Chicken

My house will probably reek of garlic for a week. My husband said the smell was so strong that it gave him a headache and didn't even try it. I did. The chicken was moist but I wasn't impressed.
