Recently turned vegan and determined not to let it affect my new-found love of being a foodie. Constantly searching for new fun foods to eat that aren't necessarily conventional.
My favorite things to cook
Spaghetti! I've always loved Italian food but the dairy never loved my tummy back. Now that I'm vegan, I love that I can still have my spaghetti- and love it even more that it can be really healthy too!
My favorite family cooking traditions
Since my family traditions revolved around eggs and butter I'm into discovering new ones. I love making whole wheat crepes with mushed banana goodness on top. Vegan blueberry muffins are awesome too.
My cooking triumphs
Cupcakes, cupcakes, cupcakes. Can never get tired of baking cupcakes.
My cooking tragedies
It's probably good I turned vegan- cooking meat has always scared the bejesus out of me. I always overcooked chicken for fear of salmonella contamination and I just never got the hang of steak. Plus handling raw meats has grossed me out to the Nth degree for as long as I can remember.

Sun-Dried Tomato Dip
I couldn't find sundried tomatoes when I went to the store so I made some modifications and it turned out pretty darn good. Instead of sundried tomatoes I did a can of regular diced tomatoes and a can of spicy tomatoes- jalopenos added. Then I added taco seasoning to taste and a touch of Old Bay. I reduced the garlic and kicked up the pepper a few notches and it made it into a nice southwest taco dip.

Pineapple Chicken Tenders
Really a great recipe...Another way you can add a flare to it is by cooking a pineapple slice on top of it toward the end of the grilling. Also, a little honey added to the sauce tastes pretty good too. :*)
