Broiled Tilapia Parmesan
I substitued fresh basil for the dried and added a little more salt. Even my 7 year old cleaned his plate. This was quick and very good. Will cook again (and again).

Cheater's Enchiladas
So easy and so quick. The whole family enjoys this meal. Sometimes I add cooked chicken breast, but it is just as good without! The kids are always happy when I make Cheaters Enchiladas.

Chocolate Chip Orange Zucchini Bread
I have made this numerous times and we love it! I leave out the nutmeg and use candied orange peel. Every person in my office asked for the recipe.
