Bow Tie Pasta with Sausage and Sweet Peppers
Bow Tie Pasta with Sausage and Sweet Peppers
About this Cook
I'm a busy mom who used to easily get stuck in a rut when it came to cooking meals for my family. I love this site because when I want something quick and easy for dinner -- I can enter what I have onhand and come up with some great alternatives to spaghetti and tacos!
My favorite things to cook
I love to cook pasta and mexican food. I also love to find good recipes for to add a new flair for old standards like pork chops and chicken.
My favorite family cooking traditions
Each Christmas Eve night we make sticky bread and egg casserole for the next morning. It isn't the food that makes it such a great tradition, but the memory of us preparing them in anticipation of the next morning's fun.
My cooking triumphs
Anytime that I find a recipe that makes my family go "WOW!" But I think that my biggest triumph is when I made my first batch of enchiladas and it was deemed "better than our favorite Mexican restaurant!".
My cooking tragedies
Any kind of baked fish. For some reason, anytime I attempt to bake fish -- it comes out terrible. My husband has finally asked me to give up. If we want some good fish for dinner, we hit the road. ha ha

Texas Taco Soup
This was fantastic! I did not do the peppers because of my kids - but instead I added a can of undrained rotel tomatoes and used chili beans instead of pinto as I had them onhand. I put tortilla chips and shredded cheese on the table to add if desired. Both my husband and I loved it, and one of the two children went back for seconds. Yummy! Perfect for a rainy day.

Pork Fried Rice
FABULOUS! I had leftover porkloin from the night before and it turned out to be the perfect dinner choice for it. I didn't make any changes and my kids thought it was better than our local chinese restaurant. THANK YOU!!! It was SO easy it is definitely one of my new favorites

Slow Cooker Chicken and Dumplings
Ahhhh....perfection. This was the easiest recipe ever - and sooooo good! I did add some frozen veggies in when I added the biscuits. I used only one small package of biscuits based on previous reviews, as well as used chicken broth in the place of the water. Sprinkled some garlic powder, Mrs Dash and pepper in the beginning and that is all. Too good to be so easy! My husband asked that I make this a permanent part of my meal rotation. As easy as it is, it is my pleasure to do so. :-) Thanks!
