I'm a busy mom who used to easily get stuck in a rut when it came to cooking meals for my family. I love this site because when I want something quick and easy for dinner -- I can enter what I have onhand and come up with some great alternatives to spaghetti and tacos! I love to cook pasta and mexican food. I also love to find good recipes for to add a new flair for old standards like pork chops and chicken. Each Christmas Eve night we make sticky bread and egg casserole for the next morning. It isn't the food that makes it such a great tradition, but the memory of us preparing them in anticipation of the next morning's fun. Anytime that I find a recipe that makes my family go "WOW!" But I think that my biggest triumph is when I made my first batch of enchiladas and it was deemed "better than our favorite Mexican restaurant!". Any kind of baked fish. For some reason, anytime I attempt to bake fish -- it comes out terrible. My husband has finally asked me to give up. If we want some good fish for dinner, we hit the road. ha ha
