About this Cook
I am a retired professional enjoying life.I visit children and grandchildren a lot and travel a bit. I love to cook and try new dishes.
My favorite things to cook
I use my crockpot quite a bit. I do like to bake a lot and share with others.
My favorite family cooking traditions
Thanksgiving is my day of cooking. I absolutely love this day. We all get together on this day to celebrate family togetherness and eat good food.
My cooking triumphs
I consider it a triumph when a certain dish or meal comes out perfect.
My cooking tragedies
Cornbread on fire one Thanksgiving;runny pecan pie one Christmas. I try to make lemonade out of any lemons that happen my way, but sometimes you just have to suck the lemons the way they are!

Coconut Poke Cake
I made the cake and added 2 whole eggs and one egg white. I poked holes with a wooden spoon and slowly poured the coconut cream down each hole and then slowly over the whole cake.I omitted the sweetened condensed milk because I could tell it would be too sweet for my tastes. I refrigerated it, and then the next morning I took it to work along with Cool Whip, coconut, crushed pineapple, cherries. Everyone seemed to like being able to choose individual toppings. It was definitely a hit, and it was soooo easy to bake. I will definitely make again. I may try a pineapple cake mix next time.

Southern Praline Pecan Cake
I made this recipe with 1/2 cup oil and put it in a 9x13 pan. It comes out right every time. Have served it frosted and plain - both winners!

Mom's Rum Cake
This was an easy recipe. I used a 10" bundt pan. I also put brown sugar on bottom with the pecans. However, mine stuck to the bottom.Next time, I will use parchment paper and regular tube pan. I also used coconut pudding instead of vanilla. Great recipe. No one could believe it was from a cake mix.
