Too Much Chocolate Cake

This is an excellent cake. I only gave it 4 stars rather than 5 because I didn't think it was super chocolatey. It is a super moist cake. I did reduce the oil to 2/3 cup and put in mini chips as others had suggested. I also made the glaze but microwaving a canned (plastic can) super chocolate frosting. Delish!

Fresh Corn and Tomato Casserole

Excellent recipe! An absolute must to use the fresh corn cut off the cob. This dish is about the sweetness and the delicate crunch you get from the corn. Don't be afraid of the bacon, it is just a gentle added flavor, in no way overpowering. I added a small amount of minced onion. I must say, although I did peel the tomatoes, they didn't add anything to the dish other than color. I would probably leave them out next time or chop them so they are easier to eat. This recipe is a definite keeper!!

Glazed Meatloaf I

Yum! I don't like meatloaf, but I loved this one. I combined all suggestions.... put 1 piece of bread and 3/4 cup italian bread crumbs. I'm Italian so everything gets garlic added....about 2 cloves crushed. I used 3 tablespoons worcestershire sauce instead of bouillon. I also doubled the sauce for extra....an absolute must! The only change I would make is to add some real onion. I added the lipton soup trying to get mostly the flakes so the mix wouldn't make it too salty, but it wasn't enough onion flavor for us. Next time I'll add 1-2 tablespoonse of chopped onion with the onion soup mix. Thanks for a great recipe and all suggesions!!!

Spicy Grilled Shrimp

Made this for Mother's Day BBQ. What a hit!! I couldn't get them off the grill fast enough! I made exactly as is, only in a larger quantity (4lbs and split into 2 bags). I mixed everything right into ziploc bags and threw the shrimp in and let them marinate all day. I don't like spicy and this was perfect..a small kick to them. Thank you Suz....this is permanently in my recipe box!

Shepherd's Pie V

This was terrific. I did make a couple changes/additions. Like the other reviewees, I made my potatoes like regular mashed and added butter, a dash of garlic powder and milk. I didn't like the rosemary, so I changed that to parsley. I also added 1 package of brown gravy mix at the end, which made it very savory. You still must reduce the water down to about a 1/4 cup otherwise its too watery. I also added added a clove of garlic, but that's the Italian in me! The frozen peas and carrot mix made it very simple. A sure keeper for my family!!!!

Kentucky Butter Cake

Good cake. My friends loved it, I thought it was a little dry. I doctored it just a bit. Instead of 3 tablespoons of water in the sauce, I used 2 of water and one of rum. I used a skewer to make the holes, next time I would use something wider since the sauce didn't penetrate well (I think if it did it wouldn't have been a little dry). Also, I made a chocolate glaze to drizzle over the top (mix 3 tablespoons cocoa, 2 tablespoons melted butter, 1 cup powder sugar and 2-3 tablespoons of hot water...put in ziploc and cut the corner & use as piping bag to drizzle over cake - gave it a fancier look).

Chuck's Come On Ice Cream (or Night of the Red Death) Chili

FANTASTIC!! Never made anything but a ground chuck chili before and now i'll never use ground chuck again. This was outstanding. Not too spicy...just a little kick. The key is letting the meat marinade overnight in all those spices. The only change I made was to cook it in my crockpot. Cooked for 6 hours and the meat was so tender it just fell apart so it was almost shredded. Made alot so I gave some away to family and friends who are raving about it! Thanks for a great recipe.

Cocktail Meatballs

Excellent! Made enough for my husband's retirement party ....everybody was raving! I actually didn't have time to make little meatballs so I used store bought and let them cook in the crockpot all night long....so tender and delicious. will definitely make them again. Thanks Lara!
