Great side dish, I didn't have the whole spices, but used ground instead (eyeballed) and it was wonderful. Very subtle and delicious.

Grilled Romaine Salad

Fantastic!! I had serious doubts, but went ahead with grilling the romaine and it was simply outstanding. My family loved it :) The slow roasted tomatoes were divine too.

Zucchini Saute

Reviewed: Mar. 16, 2008
Great vegetable combination. Giving four stars as written, because of inaccurate cooking time, in my opinion. Also I would cut down the Italian seasoning to 1/2 tsp, because it overpowered the taste of the veggies. I would make again with adjustments. Especially during summertime, when zucchini is plentiful.

Wild Rice Casserole I

Reviewed: Mar. 16, 2008
We really enjoyed this side-dish. Only drawback was that I expected it to be done in 2 hours and it wasn't. No worries, we just ate 2 hours later! I did add about 6 oz. more water to try to speed up the process. This recipe make waaaay more that 8 servings, so it would be perfect for a large crowd. We are looking forward to the leftovers of this one.

London Broil II

Awesome marinade! I didn't have time to marinade for the full 5-6 hours. I can't imagine how amazing the flavor would have been if I had. This is a definate keeper. My boys are already begging for a repeat performance. They know I never make the same thing twice within a month's time. I will probably break the rule on this one, though.

Autumn Spice Ham Steak

Really tasty and easy. I opted to cook them in the oven at 450 degrees for 10 minutes, since I was making the Sugar Snap Peas from this site with them. Both turned out excellent.

Fantastic! I made these with the Autumn Spice Ham steaks. Cooked both in the oven at the same time. I also, made mashed sweet potatoes with butter and the juice and zest of a lemon...those didn't go over well though.

Filet Mignon with Rich Balsamic Glaze

Reviewed: Feb. 15, 2008
Excellent and super fast to prepare. Be sure to have all your other side dishes ready, before you begin. I was doubtful about the cooking method, but the steaks turned out perfect. We didn't even let them rest after pulling them from the pan. They looked incredible and we couldn't wait to dive in!!! I know that's a big cooking sin, but it was late and we were too hungry :) The only addition we made, which is personal preference, is to add blue cheese to the top, once the steaks were plated. Really an incredible meal and perfect for a busy night. Serve with Easy Asparagus and Mandarin Almond Salad from this site and Rutherford's Cab-Sav....heaven.

Pork Chops with Raspberry Sauce

Reviewed: Feb. 1, 2008
Very tasty. If you are using thick cut chops I would recommend putting the lid on while you are browning, mine didn't cook all the through, so I had to zap them in the micro (family was at the table, pounding forks!). They still turned out tender and juicy though. The sauce was excellent, as well as the seasoning.

This is a good recipe, I felt that it could use some additional seasonings though. My family raved about it, so I will try it again with some thyme and sage added.

Homesteader Cornbread

I had my heart set on a sweet cornbread (as described), but this cornbread is not that sweet. The texture was fine, but the flavor was lacking. My family liked it, apparently I'm the only one that did not.

Pork Chops with Blue Cheese Gravy

Reviewed: Oct. 4, 2007
Excellent recipe! I doubled the blue cheese and cream, so I would have enough gravy for the mashed potatoes I made. The blue cheese flavor is very subtle. Also, be sure not to overcook your chops the recipe calls for thick chops, my chops were about an inch thick and I only cooked them for half of the suggested time, then kept them warm off the heat, They turned out wonderful. Try this recipe! On a side note, what happened to the menu section on this website?

Peanut Butter, Mayonnaise, and Lettuce Sandwich

Reviewed: Sep. 18, 2007
My family has always been teased for eating peanut butter and mayo sandwiches! I'm relieved to find out that there are more of us "weird" people out there :) We have never tried it with lettuce though, so we will look forward to that addition. You MUST use REAL mayo (Best Foods) and San Francisco sourdough bread. It's divine.
