Baked Pepperoni Pizza Spread

Reviewed: Feb. 6, 2012
This was interesting. I didn't really feel that the mozzarella cheese melted. I didn't like the texture of it. I doubled the pepperoni and added some garlic powder and Italian seasoning. The guys liked it, but it wasn't creamy like I hoped it would be.

Kielbasa and Potato Bake

Reviewed: Jan. 30, 2012
This was a good "comfort food" meal, but I agree with other reviewers that it's a bit bland. I took the advice of others and boiled my potatoes 10 minutes before mixing in the other ingredients. I also browned my sausage with garlic in a bit of olive oil. Only used 1 soup can of milk and it was nice and creamy, not soupy. Just lacked much flavor. Needs additional spices.

Fiesta Fry Pan Dinner

Reviewed: Jan. 28, 2012
This was a decent dinner. I used about a 1/2 packet of burrito seasoning because that's what I had. Left out the corn and only used 1 cup of water. I also added a can of black beans. We served with tortillas. The recipe is versatile and filling.

Slow-Cooker Baked Bean Stew

Reviewed: Jan. 14, 2012
My family enjoyed this dish. It is a little on the bland side, although I still liked it. My hubby and son added some hot sauce to their bowls and declared it perfect! I do not see a reason to put the veggies and olive oil in first. I threw everything in together (with no olive oil) and cooked for 4 1/2 hours and it was perfect. The veggies were plenty soft. Left out the garbanzo beans. They just sounded wrong with baked beans. Overall an easy, comfort food type of meal!

Slow Cooker Scalloped Potatoes with Ham

Delicious and quite easy to throw together, but boy was it tough to clean my crock pot!

Honey and Rosemary Sweet Potatoes

Reviewed: Dec. 14, 2011
This was simple and good. I used 2 tsp of dried rosemary and didn't think that was too much.

Cheesy Taco Dip

Reviewed: Dec. 3, 2011
Simple and delicious! I didn't have crushed tomatoes, so I used a 16oz jar of salsa instead and I think it's better this way. Adds some nice spice. I also cubed my cheese rather than shredding it. Doesn't make a difference as long as it can melt easily.

Pumpkin French Toast Bake

This was delicious! I cut the recipe in half for my family of 3 and it was perfect. Very easy and quite good. I used sourdough bread.

Glazed Mint Brownies

Reviewed: Nov. 19, 2011
These are delicious! I'm not sure why previous reviewers found the brownies to be grainy in texture. My only thought is perhaps they didn't use a blender to mix the eggs, sugar, and flour. The brownies are super quick and easy to make; don't use a mix! Mine sunk in the middle, which may be due to altitude. I also only had about 1/8 tsp of peppermint extract, but it was actually OK. I'd probably use 1/4 tsp next time. Hubby said these taste like junior mint brownies!

Slow Cooker Italian Chicken Alfredo

Reviewed: Nov. 15, 2011
This was OK. I found the sauce to be very soupy (not thick enough), and also nothing like alfredo.

Baked Fettuccine Lasagna

Reviewed: Nov. 15, 2011
My family enjoyed this very much. I only used 9oz of pasta and I feel that was more than enough. I put it in an 8x8 pan and it worked great. Also only used a 15 oz can of tomatoes. I wasn't so sure about just dumping the soup on top and not mixing it in, but it was just right!

My Hummus

Reviewed: Nov. 5, 2011
So very yummy! I wanted to use this in wraps and sandwiches, so I wanted it pretty thick and ended up using less than 1/4 cup of the reserved liquid. Thanks to the updates of the author, I added 1 Tbsp more tahini (peanut butter is NOT an acceptable substitute) and used 1/2 tsp of salt. I put the beans, minced garlic (2 cloves), tahini, and lemon juice into my food processor and blended and then added everything else as it was mixing. I ended up using about 1/2 tsp cumin and 1/2 tsp black pepper. Lastly, I just blended in the olive oil since I am not using it as a dip. It's perfect and we LOVE it!

Pumpkin Drop Cookies

Reviewed: Oct. 29, 2011
Yummy and soft cookie! I got 64 from this, and the frosting was the perfect amount - just covered them all. I added some candy corn to the tops and everyone loved them. The only reason this isn't 5 stars is that the cookies on their own are a tad bland. Maybe adding some pumpkin pie spice would fix that problem.

Spinach and Tortellini Salad

This is a nice, light salad. I used fresh spinach. Probably only used about 4oz of dressing, which was plenty. People could add more if they wanted it.

Heather's Slumgullion

Reviewed: Sep. 27, 2011
OK, this was fab and so easy! I used turkey kielbasa and one each of green and red peppers. I also seasoned a little with garlic salt. I fried everything as directed for 13 minutes and then added about 1/2 a bottle of beer and boiled for another 10 minutes. The potatoes were nice and tender and I think the beer added some good flavor. I highly recommend this!

Baked Chicken In a Sweet BBQ Sauce

You know, this was fine. Didn't love it. I probably should have covered the dish as others have because my sauce disappeared and just burned to the dish.

Pumpkin Chocolate Chip Cookies III

Good cookie and pretty easy to make. I used real pumpkin that my sister put up and let me have. I agree that these are best out of the fridge. They are very light and cake-like.

Slow Cooker Cilantro Lime Chicken

Reviewed: Sep. 25, 2011
This was a good, basic recipe. I only has 8oz of salsa, so I used a can of diced tomato with it. I also didn't have a fresh lime so I used 3 Tbsp of lime juice. I couldn't really taste the lime so I'd use more next time. I added a can of drained black beans and that filled it out a bit. Very filling and enjoyable.

Colorful Black Bean Salad

This is a nice salad. I doubled it but did 1 can of corn rather than 4 of black beans. Helped add color and flavor, I felt. We used chips to scoop this up.

Colonial Pumpkin Bars

As other reviewers have said, this is a cake not a bar. It's good and fairly moist, I liked the frosting, but it was nothing amazing. There are other pumpkin cake recipes on this site that I like better.
