Flank Steak a la Willyboy

This is a great marinade! I use red wine vinegar because I didn't have any red wine on hand and it worked great. It sat for almost exactly 24 hours and the flavors really soaked in. Great!

Pumpkin French Toast

This was good, although as others have said, we could not really taste the pumpkin even though I increased it to 1/2 cup. I used 1 tsp pumpkin pie spice in place of the cinnamon/nutmeg combo and added 1 tsp of vanilla. The batter was really thick, so you want to use a hearty bread.

Chicken Breasts With Herb Basting Sauce

This wasn't as flavorful as I thought it would be, which was a surprise with all the seasonings in it. I used skinless chicken breasts and that may have contributed. I doubled the sauce and was very glad I did. It wouldn't have covered all the chicken otherwise! Baked covered for 40 minutes and then uncovered the last 5 minutes.

Bachelor's Creamy Pumpkin Soup

My husband thought this was amazing and called it pumpkin pie soup! I did like it as well, just not as much as him! I added 2 Tbsp brown sugar, as well as 1/2 tsp each of cumin, sage, and cinnamon. Also used chicken broth instead of water. I do recommend using heavy cream for the most creamy soup. Very nice on a cold winter evening!

Chocolate Covered Cherry Cookies II

Heavenly choco-cherry goodness! What a perfect cookie. I do recommend that you make them fairly small so the cherry doesn't get lost. I added an extra egg and then had to stick the dough in the freezer for about 15 minutes so I could roll it into balls. I used 6 Tbsp of cherry juice in the frosting and used most of it since I spread it on the cookie out of the oven as well as spooning it on before I baked them. Store in a tupperware container in the fridge and they stay soft but the frosting doesn't melt. Delicious!

Quite delicious! I also used O'Brien potatoes and it worked beautifully. I used 9 eggs and 12 oz of evaporated milk. Mixed it up the night before and stuck it in the fridge overnight. It was gobbled up by everyone the next morning!

Oh my goodness, this is absolutely amazing! Made exactly as written and everyone raved. It had a great little kick to it and was creamy and delicious. I served it with Savory Bubble Bread from this site and that was a nice match. Love it, love it, love it!

My Kid's Favorite Pork Chops

Pretty good recipe! I didn't have steak seasoning, so I used salt, pepper, and garlic powder. I also added about 1 tbsp of steak sauce to the sauce. I used thick cut boneless pork chops and they did not get dry. Took about 1 1/2 hours to cook. The sauce tasted great on top of the chops!

Simple Ranchy Breaded Fish Fillets

I have made this a couple times now, once with crushed Ritz crackers and once with breadcrumbs. I like it with the Ritz better, but it's great either way. I dredge my fish in buttermilk and then dip in the breadcrumb/ranch mix, so no paste mixture for me. I also bake at 400 for about 20 minutes. My son, who "hates" fish will eat these if I cut them in strips and call them fish sticks! Nice!

Baked French Fries II

These are good and very easy. I did put the cheese and basil in a ziptop bag and then placed the potatoes in there and shook the bag. I liked this because it put the seasonings on both sides of the potato wedge. You may need a little more cheese and basil though, if you do this. I sprinkled garlic salt and pepper on before putting in the oven. They came out perfect!

Chicken Fried Chicken

Wow! One of the best meals I've ever made. We loved this! I did add another 1/2 tsp of pepper, 1 tsp parsley, 1 tsp garlic powder, and 1/2 tsp paprika as suggested by another reviewer. Didn't find it bland at all. I also made Mom's Country Gravy from this site to serve with it and it was seriously delicious!

Just amazing! I've never made gravy before but my husband wanted it for chicken fried chicken, so I tried this one. Very easy! I browned the roux for about 7 minutes and then used about 3 cups of milk. Perfection!

Halloween Popcorn Pumpkins

Oh how delightful! And fun! Super easy to make and quite yummy. I bought "natural" (it's an actual flavor - who knew?!) microwave popcorn and 1 bag makes more than 5 cups. No problem with too much butter taste. Also added 1 cup of mini-marshmallows to the popcorn/peanut/candy corn mix. I'd like to try it with a couple squares of caramel melted in the butter/marshmallow mix next time, as suggested by someone else, just to enhance the flavor even more. I'll probably add more candy corn too.

Mom's Mexican Cornbread

This is good and quite easy. We did not have any jalapenos or green chilis, but would use chilis next time. We put our cheese on top for the last 5 minutes in the oven but mixed everything else together as written. Great main dish!

Roast Pork with Maple and Mustard Glaze

This is a nice recipe. I made as written except I added some garlic powder and onion powder on the roast before pouring the glaze on. I thought the glaze was actually quite thick because of the syrup, but I did start off with about 1/3 on the roast and then basted a couple more times. Very flavorful, although I cooked some carrots with it and didn't like the glaze on them. Next time I'll do them separately. My roast was done in an hour (carrots weren't).

Skillet Zucchini Cornbread

This was pretty good, although mine was not moist it was fairly dry. I used 2 cups of zucchini because that's what I had frozen. Don't keep self-rising anything on hand, so I added 1 tsp baking powder and another 1/4 tsp of salt and it worked fine. Next time I would increase the sugar to about 1/4 cup because I prefer my cornbread a little on the sweet side. The cottage cheese gave it a very different flavor.
