About this Cook
Registered nurse, single mom, 2 kids (boy & girl). Very content & happy w/my life! :)
My favorite things to cook
Baking, stir-frying & the crockpot are my favorites but I love trying new recipes. I stay away from the grill unless it's chicken, hotdogs or hamburgers, tho. I'm no good w/steaks. I also hate fry-daddy's. Those things are disgusting. :)
My favorite family cooking traditions
My daughter & I love to cook & bake together. Banana bread & choc. chip cookies are favorites in our family. Also, when we have a free day we'll make a recipe out "Mastering the Art of French Cooking". It's hysterical. Those recipes take half the day & a minimum of 3 sticks of butter to make.
My cooking triumphs
Cooking Thanksgiving at my ex-husband's house every year. I have to drive 10 hrs. to get there the day before, all my own spices packed, hoping that he'll have gotten everything on the grocery list that I've e-mailed him. He has hardly any utensils or baking dishes so I bring as much w/me as I can. It's a challenge!
My cooking tragedies
My first time cooking fish. I didn't realize that you had to remove the scales. We had to give it to the dog. He wouldn't even eat it, he buried it in the yard under the snow. Then, when Spring came, he dug it up & was running around with it!

Pasta Primavera Sauce
We served this over whole wheat angel hair pasta & it was a huge hit! Thanks for posting. :)

Vegan Cheesecake
The flavor & texture were much more like a custard than cheesecake. But it tasted great. It did require almost an hr. of baking time to get it to set. After cooling I refrigerated it overnight and served it with cherry pie topping. The tartness of the cherries balanced out the sweetness of the cheesecake nicely. Thanks for posting this! :)

Spicy Tomato Bisque with Grilled Brie Toast
I used a 14 oz. can of the puree and a 14 oz. can of diced tomatoes w/oregano, garlic & basil. I also skipped the toast part. This recipe was so yummy I am going to make it all the time! Thank you so much for posting it. :)
