Best Ever Jalapeno Poppers

Fantastic poppers! Made 24 using jalapenos from our garden. They were devoured in minutes flat!! Easy to make - my 18 year old made them himself. A little time consuming but oh-so-worth the effort!! Cooked them for two minutes in the deep fryer. Three minutes would have burned them. Thanks for an amazing recipe, HLSANDS!

Banana Muffins II

Awesome muffins. Doubled the recipe figuring with four boys, they'd likely be gone as fast I could make them. 3/4 of the first dozen are gone before the 2nd dozen are in the oven. Delicious banana flavour. Nice and light, not as dense as a loaf. Will be making these again soon, and have replaced my former favourite, "banana banana loaf" with this!

Luscious Slush Punch

Made this for my sister's bridal shower. Everyone loved it and was asking for the recipe! I also froze in ziploc bags which I placed inside a 2cup measuring cup to hold bags upright while I filled them. Can't wait for the summer party to make it again!

Sweet Restaurant Slaw

I'd never made coleslaw before making this, but have had enough at restaurants to know if this was good or not. It isn't good. It's freaking AWESOME! My picky family hesitantly tried it and raved about it, and my British mum said it was even better than from any fish & chip shop. Only modification I made was omission of poppy seeds (had none) and used mayo. THIS COLESLAW IS EVEN BETTER IF IT CHILLS OVERNIGHT!! Enjoy! I will be making this many, many more times! Thanks for such a great recipe!

Shrimp Fettucine

Delicious! I was getting bored with the usual fare so thought I'd try this. As I put it on the table, my husband said it was a fancy enough dinner to call for candles :) We both loved it! It's simple to make, with most ingredients being at hand. My variances were spaghettini instead of fettucini (was all out), skipped parsley (had none), added cilantro instead. I also used frozen, uncooked shrimp which I defrosted and peeled. I added more broth than called for simply because I was too lazy to measure, and thought it would do better with more anyways, which gave us both a few tsps of buttery sauce to put on top of our pasta. I've added this to the recipe box already!

Awesome Sausage, Apple and Cranberry Stuffing

I made this last year as my first attempt at homemade stuffing. This is the absolutely best stuffing I have ever had. I did modify it a bit - I omitted the liver (personal preference), and I discovered an awesome cheat that works just as well and saves a ton of time and ingredients. There's a stuffing bread loaf made by Turkey Time that is already-seasoned for stuffing. I slice it into slices, toast them in the toaster, then cut them into cubes while the next four slices are toasting. Much less hassle than trying to toast them on a sheet in an already much monopolized oven. Oh, and it was so good that I made it twice more on consecutive days afterwards in a casserole dish (just added more liquid (Campbell's chicken broth) than it called for) and it turned out awesome as well. Now I'm getting ready to make it again this weekend! Happy Thanksgiving!

Fresh California Salsa

I'd never made salsa before trying this recipe, but my husband misses "real" california/mexican food and I thought it would be a nice treat for him. He said it was the best salsa he'd ever had. I thought he was kidding me considering he's likely had many different salsas being from california and salsa being served with nearly everything. Have made it twice now over a couple of weeks and it will be a staple in our home! Yummy!

Sunday Gumbo

Wanted something different to make than my usual fare. Had sausages and chicken, and rice and shrimp, so this sounded perfect. Had to modify it some, because as usual, I didn't have everything it called for and didn't want to go back out to the store. Didn't have chicken broth, so used water and beef boullion instead. Didn't have any celery or okra either, but that's okay because they're kinda gross anyways. (LOL!) Used three cloves of real garlic instead of powder, no marjoram or thyme so used italian seasoning instead. Used white rice and defrosted some frozen cooked shrimp. Didn't measure the cayenne, might have added a bit more. Knew I had to thicken it up with something, as I was omitting the okra, so added a can of Heinz Baked Beans (yes, it was good!). When this recipe was almost done, I realized it needed more rice, so I tossed in some Minute Rice as well (too late by then to add and cook more 'real' rice). As well, at the very end, I added some Bisto Chicken Gravy granules to thicken it up a bit more. With these modifications this wasn't a very runny soup, but was still wet enough to dip toasted bread in but was not as thick as a stew. Was too spicy for our 2 year old, and both kids complained about the shrimp (all the more for us!). We both loved it and will make it again. Although I left out a few items, I don't think it was lacking at all. One thing to note though, this made SIX good sized bowls of soup, not SIXTEEN as indicated.

Spaghetti Pie III

First of all, let me say that my picky family LOVED this! Ages 2, 4, 15 and 42 - they all wanted more! I truly didn't expect they would as they are so picky, I didn't think they'd even touch it since it was different. Made it pretty much to the recipe. Used red pepper instead of green (what I had on hand, and personal preference), added a good sized dollop more of sour cream because I was worried it would be dry, based on previous reviews. It was perfect. Love the sour cream/cream cheese combo. Second time I made it, I forgot to blend in the onions. Tossed them on top of the white mixture, and then topped with meat sauce. Didn't matter it wasn't blended in. Will be making this again and again. It's always good to find something everyone loves. Great next day for leftovers. Excellent for make ahead and bake next day. Takes longer than just making spaghetti, but well worth the wait. Enjoy!

Salsa Chicken

Made this last week for my husband and picky son. Son didn't have any because he wasn't feeling well but has asked me to make it again because it smelled so good. My husband quite liked it as well. I found that there wasn't enough salsa to cover the chicken so will need to add more next time. My friend made it the same week and shook seasoning with chicken in a zipper bag and she said it was great like that (more evenly coated with seasoning). Might try it that way next time (this weekend!). Looks like it's going to be a staple in our house! Lucyfrog - Hamilton, Canada UPDATE: I make this quite regularly now, and the kids (big & small) can't get enough of it! I've given the recipe to many family and friends and they all LOVE IT!
