Chicken with Tomatoes and Olives

Absolutely loved this!!!! Served with buttered fettucini pasta. Great flavor. Only addition was some salted butter when sauteeing the chicken breasts. I did flatten the breasts so they would be thinner and cook quicker.

Poor Man's Hamburger Steaks

I will never forget when one of my high school friend's mother made this when I spent the night. Loved it, came home raving about it, and finally got my mother to make it. Still make it to this day. Great comfort food!

Vodka Cocktail Sauce

Used readymade cocktail sauce, added Grey Goose vodka as well as extra horseradish and cayenne for a very spicy, delicious sauce. Company loved it!

Apple Blue Cheese Salad

Simple to make. Used real bacon bits instead of frying the bacon. Toast the pecans for added flavor. Used Trader Joe's balsamic vinegarette. Will make this for company again in a few days.

Meaty Thick Man Chili

Used crushed tomatoes and two cans of beans. Left out the red pepper and used frozen diced onions and green peppers, salt and pepper. Reduced the amount of meat to half and it was still extremely meaty.

Cafeteria Macaroni and Cheese

Had to keep adjusting the seasonings to get this just where I wanted it to be. Ran out of cheddar so I added some colby and American. Not bad, not mindblowing. Probably won't be trying this one again.

Brown Sugar Meatloaf

Doubled the recipe and left out the milk as it was moist enough. Added a bit more mustard powder. We are not big meatloaf fans but I had some ground beef that needed to be used -- We were very impressed.
