Beer Bread I

Excellent. I used 1/3 cup sugar as recommended by others. Mixed together as directed, THEN turned on the oven to preheat, which gave the flour about 10 minutes to rise a bit. Right before popping it in the oven, I melted 1/4 cup salted butter and poured it on top of the batter. Baked 60 minutes. The butter gave it a crunchy, slightly salty outter crust, which was divine. Thanks for the recipe! It's definitely a keeper.

Botercake

I made this once with the exact ingredients called for, and once altering the them per a reviewer -- both came out great but different in texture and height (I used extra large eggs in both recipes and a 9" cakepan). The first time I baked it for 40 minutes with the exact ingredients called for. It came out cakelike in a fluffy texture, buttery, and lemony. After the first 20 minutes baking, I put 12 whole almonds all around the edge with the point toward the middle, which gave it a pretty decoration when I sliced it up. The second time I made it, I used the ingredients from a reviewer -- with 1 1/8 cups each of flour, sugar, and butter. This one turned out very moist, much more dense and about 1.5" high. I believe to get more of a cookie consistency you'd definitely have to use a 10" cake pan. I didn't have any vanilla sugar, so I mixed 1/4 tsp liquid vanilla with 1/2 cup granulated sugar and will use the leftovers for another recipe. Both ways preparing this were really good. Thanks :)

Salmon Patties II

Great, easy recipe. My 10 year old daughter made the patties, I fried them. Check your can of salmon and be sure it's a big one -- my cans were only 6oz, so I used two cans and the patties were delicious. Added a bit of salt and pepper into the batter. We made 8 patties with the recipe and served with some tartar sauce. Yummy. Thanks for a keeper :)

Strawberry Spinach Salad II

Easy Grilled Tri Tip

Easy recipe, marinated for about 6 hours in fridge, grilled a few minutes on each side, and it was fabulous. I was worried that it would lose it's tenderness if sliced before grilling -- but it was very tender and flavorful. I also made extra sauce and marinated some huge raw shelled shrimp in it in another ziplock bag, then skewered them and grilled along with the tri-tip. They were FABU too! Thanks for the recipe :)

Homemade Butter

We learned to do this when visiting a local dairy this fall. They put 1/2 a small container of whipping cream into a container with a lid, then passed it around to all the kids to shake, shake, shake. Then we'd open it along the way and see the different textures -- from liquid, to whipped cream, to butter. It's a lot of fun for the kids and makes a great presentation and discussion at the dinner table!

Potato Chips

This was great fun for my 9-year-old daughter. I taught her how to safely use the mandolin. She sliced them thin, put them in a plastic baggie with some oil, tossed them around, and laid a layer on a Pam-sprayed glass baking dish (didn't stick at all). Popped in the microwave for 8 minutes (tried 2 minutes at a time with the first batch to get the right timing) and then removed them and sprinkled with seasoned salt. They were terrific! Thanks!

Claire's Yummy Crepes

Very easy and delish. I had to add more milk to make it runny, which is really the key with crepes. I also added 1/2 tsp of vanilla to the batter. I put out several small bowls with sugar, powdered sugar, brown sugar, jam, syrup, and whipped cream in them. My kids made their own style. Some of us like to roll them up and eat with our hands, others like to fold in quarters and use a fork and knife. You won't be disappointed.

Chicken and Dumplings I

I really wanted this to be good, but I didn't care for it; sorry. Same problem as others -- dough was way too sticky to work with, had to add more flour which resulted in hard dumplings which tasted like the recipes calls for -- flour and egg. Broth and chicken came out okay, but I added chicken boullion, bay leaf, oregano, carrots, and onions. Definitely won't try again.

Cake Mix Cookies IV

This is about as easy as it gets for a cookie recipe. Rip open a box of cake mix, plop in two eggs and a little oil, and voila! Great cookies! I made mine too big, so by the time they cooked on top, the bottoms were pretty well done. Just follow the recipe and make "little balls" and you'll be good to go! UPDATE: I made these the next night with lemon cake mix. I scooped a bit up with a teaspoon, rolled it in a ball, dipped it in sugar and baked. They were super delicious. Another Update: We made these with dark chocolate cake mix and 1/2 bag of chocolate chips. The best yet! Perfection.

Mom's Buttercream Frosting

This recipe was very easy to make. It came out light and fluffy. I stirred the flour/milk mixture for about 5 minutes then popped it in the fridge. If you're looking for pure white frosting, it's not going to happen because of the vanilla (unless you get clear vanilla) It was pretty tasty, but a bit on the shortening texture/taste side. I probably will not make this again.

Microwave Apple Crisp

Yummy! I used Fuji apples because that's all I had. I peeled them with a potato peeler, cored, then sliced about 1/4 inch. I popped it under the broiler for about 2 minutes to crisp it up. Didn't have any ice cream or whipped cream on hand, so just poured a few tablespoons of milk over the top. It was yummy and my 7 year old said it's her new favorite. Thanks!

Chicken Tortilla Soup II

Made it vegetarian and it was delicious. Didn't have any cilantro, so added a cup of salsa that had cilantro in it. Instead of chicken added a bag of corn. Sprinkled with cheddar cheese before serving. Yummy!

The Real Reuben

This was a great recipe. I followed chefsingledad's suggestion on how to assemble it. Only disappointing thing was the kraut and meat was cool, while the bread and cheese were hot from broiling. Next time I will microwave th kraut and meat first to be sure the whole sandwich is nice and hot. Thanks for a good recipe!

Bourbon Pecan Chicken

Very, very good. I added water and some more butter as the chicken was cooking to avoid it burning (I tend to burn chicken when I cook it on the stovetop), but besides that, followed exactly and our guests asked for the recipe. Even better the next day for lunch!! Thanks for a great one!

Sloppy Joes II

Very good. Will definitely make again. Used red pepper instead of green. Browned the ground beef first, removed from pan, then sauteed onion & pepper in the same pan. Once translucent, added beef and remaining ingredients. Did have to add enough water so it could simmer for 30 mintues.
