Baingan Bharta (Eggplant Curry)

very good! my husband had told me to give up on eggplant and this was my last attempt at making somethin good -- and it worked! im second generation indian and have more indian spices in my cubboard, so i ommitted the curry powder and used ground cumin, coriander, red pepper and tumeric instead. i also fried the onions with mustard seeds too (not realizing i was using them instead of cumin seeds!). it was really easy to peel the eggplant right out of the oven.

Mexican Baked Fish

i omitted the sour cream and avacado and this was still awesome! the fritos are a great idea. great quick healthy dinner. my husband loved it. make sure you add enough salt! i also added curry powder to the fish.

Delicious Raspberry Oatmeal Cookie Bars

yummy. i have a martha stewart version of this recipe where she adds shredded almonds. this one is much easier tho :) its can be a bit on the sweet side tho.

Pico de Gallo Chicken Quesadillas

i never thought quesadillas were so easy to make! i made some changes however, and my husband & I really enjoyed the meal. I added some spices to the cut chicken and let it marinate for a bit - i marinated with some cumin, salt and pepper, and some cajun seasonings i had lying around my kitchen. I also added zuchinni to my veg mixture. Additionally, for a more crispier quesadilla, i lightly brushed some olive oil onto the tortilla before heating. this is a great light meal, esp if you get low cholesterol tortillas... thank you so much! this ones a keeper!

delicious - but dont forget to grease the pan (like i did!!). id like a bit more texture... next time i might add some tomatoes and more spices. a bit on the bland side.

Crispy Orange Beef

WOW! this is the best recipe ive gotten from allrecipes.com. awesome taste, impress anyone with this dish! my hubby said it was better than pf changs! i also doubled the sauce ingredient (i used 2 lbs of beef too)and added chilli paste to the sauce (found in chinese stores) as well as thinly sliced red bell pepper and spring onions to the final product. yummy yummy! will def make this again!

Giant Crisp Chocolate Chip Cookies

I halved this recipe just to try it out - i should have greased the pan even though the recipe says not to bc the cookies were stuck to the pan and tooo thin. I'm not a master chef or anything so it could have been my fault but it was a disappointment after all the time i put in.

if u make this a couple hours before a party, make sure to add the pita pieces immediately before serving!! or, i was thinking you could even serve it separately and guests can add pieces as they wish, and they're still cruncy! one thing, what the heck is sumac powder?? couldnt find it anywhere....

Minestrone Soup I

mmm mmm good! this is a delicious soup recipe!! this is the first soup that ive ever made and i found it very easy. I also added kidney beans, finely crushed ginger (which i add to practically everything), mushrooms, basil and oregano. I didnt have celery, but it turned out just fine! i should have added more broth bc it was a bit chunky with the added mushrooms, but still a hit! im definetly going to make this again, and am going to share the recipe with my favorite cook, my mom!
