Burrito Pie
Super yummy!!! My husband made this last night for supper and I am going to have to ask him to NOT make it again! I ate almost the whole dish it was SOOOO good. Seriously though it was easy enough for a novice to make and could be altered iun so many ways, but is perfect as it is. Thanks for this great recipe!

Connie's Zucchini 'Crab' Cakes
really fantastic. crispy outside, soft and 'melted cheesy texture' inside. I was worried that they would be flat as there is no 'salt' in the recipe, but I made them as directed and they were perfect - a little chipotle mayo would be perfect with them. Yummy!

Sophie's Zucchini Bread
As recommended I greased my pans. I also used 1.5c whole wheat flour and 1 c all purpose. I used 1/2 cup oil and 1/2 cup unsweetened applesauce and cut the sugar to 1.5. It is fabulous. Great way to get some veggies into the kids and make a great fall smell in the house :)
