Spaghetti Casserole II

Can't imagine anything called "spaghetti" without garlic, basil, or oregano. Added them to the tomatoes. OK recipe, but only if there's nothing else in the house to make.

Baked Apple-Pecan Maple Pancakes

Should have read the reviews. Found the pancake to be dry and tasteless. Not enough maple flavor (used read maple syrup). If I make it again, I'll layer apples and maple syrup.

Cindy's Really Good Au Gratin Potatoes

Should have read the reviews before making this. My sauce just sat on top of the potatoes. It was too thick to move through the potatoes. Layering may be a better approach. Or adding more milk to the roux...perhaps a cup and a half.

Orange Spiced Chicken

Great for this season when fresh oranges are so plentiful. Like many others, I flip-flopped the oj and soy sauce. Also substituted honey for the white sugar the second time I made it. The sauce seemed to stand up better.

Maybe it's just my own personal taste, but I thought these were just so-so. It seemed the oatmeal and semi sweet chocolate overpower the recipe. I'm a huge caramel lover and would have liked to taste more of it through the other ingredients.

Spaghettini Chicken

Nice fresh flavors. I had some tomato paste in the refrigerator and added two tablespoons. That, plus about 30 minutes simmering, gave a little more body to the sauce. Great for left-over chicken.

Not sure why you need olive oil when it's already in the pesto. Suggest deleting oil, increasing pesto to 1/4 cup and double tomatoes.

Mom's Ginger Snaps

I've made these crispy, chewy cookies many times and always get compliments. The dough is oily, though, so I like to chill it for an hour or two before shaping into balls. A great "coffeehouse" cookie.

Salisbury Steak

Not really what I had hoped for. The patties did not hold together well and yet had a very dry texture...as if there was too much binder. And the sauce was too sweet. Though it reminded my husband his mother's more simple cooking, he also found it rather bland.

Pretty bland. Perhaps it needed the salt that I omitted. Had hoped the tumeric and fresh garlic would overcome the need for salt. But they failed to enliven flavor of any kind.

Barb's Broccoli-Cauliflower Salad

I can't imagine a broccoli salad without caulilflower. Not only a pretty presentation with the varied colors, but such a wonderful comibination. The flavors excel in the mayonaise-based dressing. I've made this recipe--just as it is--for many years and still have requests for it.

Excellent--I'm always looking for good recipes for chicken left-overs. Great flavor. Didn't find it mushy at all--the tortillas helped thicken the sauce. Smooth is a better description.

Jeff's Chili Con Queso

Did I miss something? Should "velveeta" be used instead of American cheese? They are two different cheeses. American and cheddar make a grainy consistency. In fact despite the low temperature and constant stirring, the sauce broke. Don't know that I'd make it again with processed cheese food, but that must be the difference.

No Fail Pound Cake

What an awesome cake! Had to use a lemon cake mix. Drizzled the finished cake with a lemon glaze. At a recent church fellowship, it disappeared before I could even sample.
