Red Pepper Soup
I've made this soup twice so far. Doubled it the second time. Fantastic! My family couldn't get enough.

Angel Hair Pasta with Pignoli
My family absolutely loved this recipe! It was served as a sidedish to grilled salmon and they just couldn't get enough of it! You really have to keep a constant eye on the pine nuts when browning, they will burn quick. I made 1 lb of (thin spaghetti)pasta, no leftovers.

Whit's Chicken Enchiladas
I did make some minor changes. I marinated my skinless boneless breasts in my oil,lime juice, red wine vinegar, garlic, cumin marinade and grilled them and shredded them. I decided I want to add a little more chopped jalapenos next time for added flavor. I did not cover this casserole, it browned perfectly and not too much. My family really went nuts over this recipe.
