Grilled Poblano Pepper and Mango Quesadillas

It's just a point of personal preference, but this recipe is much better when the poblano pepper is grilled before placed into the quesadilla. The flavor combo of the poblano pepper and mango is amazing.

Caramel Macchiato Ice Cream

Simply amazing. It took a few days to set up for me - which might have been my ice cream machine more than anything - but even at a soft serve consistency, it was hands-down the most delicious ice cream I've ever made. The caramel is absolutely optional, and is awesome with or without.

Mexicorn Muffins

Perfect as a loaf, too. Super moist and delicious. The only alteration I made to the recipe was to add an additional 1/2 cup of (pepper jack) cheese to the top of the loaf to give it a nice cheesy crust. YUM!

Cake Balls

This dessert is fast, easy and fun! I used a standard ice cream scoop to get about 18 balls. These would be super cute decorated as a kickball, soccer ball, volleyball or basketball. Perfect for a little (or big) boy's birthday party, where cupcakes might be too 'girly'.

Lemon Orzo Primavera

Yum! This recipe is an amazing base for total customization. I was pleased to find this low calorie recipe, and bulked it up with frozen artichoke hearts. The pasta starch combines nicely with the broth to trick your taste buds into believing this dish has cream. A slight variation on the original, that I will try next time: a touch more broth, for a little more sauce, and served on top a bed of fresh spinach leaves.

Poached Orange Pears

Simply amazing. I cut the recipe in half (I only had two pears) and threw some candied ginger into the sauce (in order to tie in the Asian meal I was having for dinner.) My guests LOVED it - even the one who doesn't like cooked fruit. Simple. Easy. Elegant. What more can you ask for? I paired it with a honey & simple cream ice cream. TOP NOTCH!

Billy's Favorite Gingerbread Spiced Coffee Syrup

If you really want to make sure that the gingerbread stands out, try (1) a rough chop of the ginger in food processor and (2) soaking the chopped ginger in the water for a few hours before making (3) increasing the amount of ginger you use. This syrup doesn't last long in my house, being used for everything from coffee to over fresh apples. It keeps well and makes a great host/hostess gift. CHEERS!

Mashed Chipotle Sweet Potatoes

This recipe was AMAZING, though I have to admit, I doctored it to suit my sweet tooth. I added a few table spoons of brown sugar to the mashed potatoes and chipotle peppers, and before I baked it in the casserole dish, I added a brown sugar and pecan topping to the top. YUM. This recipe is coming with me to the Thanksgiving Table.

Broccoflower® Mash with Horseradish

Very tasty! Quick and easy to make, and a nice substitute for mashed potatoes. I wonder if a substitution of wasabi for the horseradish would be just as good.

Goat Cheese Stuffed Tomatoes

Simply amazing. I followed the recipe exactly as specified. The end was result was tomatoes that had a soft flesh, a creamy, flavorful center. And the best part is it took MINUTES to assemble. This one will be added to the pages of my personal book of all time bests.

Cranberry Orange Loaf

Simply amazing. I have a mini-loaf pan (which makes each portion about 1-1/2 the size of a muffin), and it makes the perfect breakfast treat! These freeze really well, too. After I make them, I pop each mini-loaf into a single freezer bag. On busy mornings, I'll pull one out and throw it into my briefcase. By the time I get to work, it's thawed and ready to eat! (Even better when microwaved 'til warm and buttered!)

Pumpkin Apple Streusel Muffins

This is a wonderful recipe! It takes like the fall harvest. Made them in a the mini baby-loaf pans (approximately the size of 1-1/2 muffins), and they came out soft, moist and very good! I didn't have pumpkin pie spice, but enjoyed them with just a dash of all spice, cinnamon and all spice.
