Microwaved Potatoes Lyonnaise
I wasn't expecting much from a microwaved potatoes recipe, but this turned out great! I omitted the onion and doubled the garlic and all the spices except salt. Also used butter instead of margarine. Once the potatoes were fully cooked (it did take my microwave about 5 minutes longer), I stirred in some Parmesan. Yum! Easy & delicious!

Corn Chowder I
This is SO good. I made a big pot (subbing red pepper for onions, as I don't like onions) and froze most of it in individual servings. It tasted great when heated up! A filling, hearty chowder, perfect for winter. I just ran out & will be making another pot soon... I have a craving for it!!!

Ten Minute Chipotle Spiced Beef and Bean Chili
I used 2 chipotles & added a fresh jalapeno & fresh garlic while browning the beef. Used 2 cans of diced tomatoes & a can of tomato paste, 1 tsp. salt, & about 1 cup of coffee. (I like my chili a little soupier.) It was so easy & turned out delicious! My husband raved about it!
