Zucchini Brownies

Amazing! I followed the recipe with a tiny twist - I did mix the zucchini with the sugar at the beginning; sprinkled top with semi-sweet chocolate chips; used whipping cream instead of milk - had some to use up. Amazing! Family couldn't believe it had zucchini in it. This is a keeper!

Spicy Bean Salsa

This is always a hit - neighborhood party, soccer tournaments, whatever. Super easy, and gets better as the flavors blend in the fridge. Make sure to rinse the canned beans for best flavor and appearance. You can make this even quicker if your supermarket has pre-cut onions, peppers, and tomatoes. I like this best with fresh rather than canned tomatoes). I used Wishbone Fat Free Italian Dressing, and addedd chopped cilantro. Yum!

Rosemary Red Potatoes

These are very good. I hate "crunchy" potatoes that are undercooked, so I hurried them up a bit by microwaving the potatoes in a glass casserole dish with 1/2 cup water, for 10 minutes, stirring after 5 minutes. I also used butter instead of olive oil. Still roasted them for 25 minutes - they came out great, with very little effort. Thanks for the recipe!

Best Beef Stroganoff

This was great! We're eating low carb, so we just didn't put it on noodles, so I omitted the flour, used less onions, and more mushrooms. Otherwise I made the recipe "as is". Broth was "runny", but we didn't care.

Taco Seasoning I

Great flavor, WITHOUT MSG! Love it. I used 3 T. of this mix to 2# hamburger, added some tomato basil salad dressing and chopped green chilis, and put it on lettuce that had already been tossed with Western-type dressing. Added shredded cheese, black olives, diced onion, and diced tomatoes - and dinner was served.

Pecan Pie V

I love that it didn't have corn syrup, but it is definitely different than the pecan pie I'm used to. Tastey, just be prepared for a bit grittier.

Pork Fried Rice

Easy recipe! I adjusted it as Lisa Beth suggested. I really wanted to use up what I had on hand, and didn't add bean sprouts but it would have been that much better. I don't like spicy, but if you do the suggestions about adding cayenne or a spicy pepper makes sense. I made it with shrimp, and sauteed jarred garlic and ginger in the butter before adding the first ingredients. Thanks for sharing this recipe!

Slow Cooker Chicken and Dumplings

This was great. I used 1 can cr. of ckn and 1 can cr. of celery. I also added a bag of my favorite frozen mixed veggies. Surprising how the buttermilk biscuits really turn out like dumplings. I recommend cutting large ("Grands") buiscuits in quarters with a scissors and dropping them on top - that's all they had at the store this time!

Pineapple Chicken Bites

I think this would be better with leftover rotisserie chicken. I used a jarred plum chutney, and microwaved chicken thights for this recipe. I used pineapple tidbits, and dotted each one with honey before I closed them up. Also, next time I would roll or press out the triangles a bit first, just to get a bit more room. When folding, fold the point of the triangle over the wider part, flip it over and fold the sides in, then wrap and press the tip of the triangle around the rest of the package. That seemed to work the best. I didn't think they were soggy like a previous reviewer, but I also cooked them at 375 for 11 minutes hoping to avoid that problem. Thanks for the recipe!

Fruit Pizza I

I wrote down all the fruits I saw in the picture and make it just like that. Made a double sized one for a party, and had room for blackberries and rasberries also. Have made this several times, easy and so pretty! A real crowd pleaser.

Shrimp Tetrazzini

We made this during our seaside vacation with FRESH shrimp - it was wonderful! I added garlic, 1/4 tsp. ground black pepper, a few dashes cayenne pepper, and 1/4 tsp red pepper flakes to give it a bit more flavor. I also used 1 cup half-and-half and 1 cup water to cut down on the lactose. The leftovers were great the next day. It was a hit with young and old alike.

Rhubarb Bread I

I followed the advice of some reviewers and used 2 3/4 cup flour, 1.5 t baking soda, added 1/2 t cinnamon to the batter and used 2.5 cups rhubarb. I love rhubarb, and I think this turned out just OK. It won't slice - the pieces of rhubarb make it sort of crumble. I might use it as a base for a bread pudding, it needs a bit more flavor.

Grilled Chops with Rosemary Butter

Very flavorful, a hit for Mother's Day dinner. Just make sure that you cook the chops long enough... We bought extra thick chops and forgot to check doneness with our meat fork/thermometer and they were a bit underdone. Not the recipe's fault though.

I agree. I used 2# of italian sausage instead of the pork/beef mixture. I also sauteed chopped fresh mushrooms with the onions, garlic and basil. Wonderful!

Beer Butt Chicken
