Coconut (Haupia) and Chocolate Pie
I have made this recipe twice now and like it much better with milk chocolate chips instead of semi-sweet. Also, I cut the sugar to 1/2 cup instead of 1 cup. This is a very good pie and easy to make.

Layered Chicken and Black Bean Enchilada Casserole
5 stars from every member of our family of 4!!! I used Rosarita canned enchilada sauce. Left out the green chiles for my picky 7 year old. Didn't have any coriander so just didn't use any. Served it with cornbread and it was excellent! This is a new favorite for my family.

Kalua Pig in a Slow Cooker
This is the best recipe ever! In fact it's my only reason for owning a crock pot. I use coarse kosher salt in place of the Hawaiian salt. This can also be cooked on HIGH for about 6 hours. I also do as some of the other reviewers and put the juices in the fridge until the fat solidifies so I can discard it (or give it to the dog). And maybe it's just me, but you must eat Kalua Pig with sticky white calrose rice, otherwise it would not be like Hawaii!
