Broiled Tilapia Parmesan

Absolutely fantastic; tasted like a fish dish from an upscale restaurant. The second time we made this, I left the butter out, since it was a bit greasy the first time. We really didn't miss the butter OR extra calories. We will be making this often, as all five of my family members loved it. Thanks for the recipe!

Martha's Clam Dip

Not a favorite for my family, unfortunately. Wish I had read the reviews first and tried adding the garlic as suggested by a few reviewers; this was definitely a bit bland and adding garlic and/or green onion might have helped!

Trinidad's Ponche-de-Creme (Punch with Cream)

This was fun to try, but definitely not a favorite. I think the aromatic bitters threw it off too much for me, although my guests didn't complain. They just stated they preferred my usual homemade eggnog (Christmas Creamy Eggnog), but were pleased to try this anyway. We'll stick to the traditional eggnog from now, but thanks for offering a taste of Trinidad, anyway!

Irish Soda Bread Cookies

I made these for an after-school treat for my kids on St. Patrick's Day, and wondered if they'd like them or not with the caraway seeds in them. They devoured them! I was amazed and pleased, and made sure they saved some for Dad, who also enjoyed them. I used raisins and craisins (dried cranberries) in mine rather than currants, and dropped them on the sheet using my small Pampered Chef scoop. Easy and tasty -- we'll definitely make this part of our tradition, along with corned beef and cabbage for dinner every March 17th.

Ma Ma's Sugar Cookies

My youngest son is a HUGE sugar cookie fan, and he is so excited that I tried this recipe today -- he says it's the best recipe ever! We've tried several; we've been looking for something similar to the ones he gobbles at Ryan's buffet restaurant, and these are pretty close if you roll them in sugar, flatten slightly with a glass, and bake for 8-9 minutes. We overbaked a batch by mistake and they were still OK, just crunchy and crisp (we prefer them softer). I never bought butter-flavored Crsico before, but I'll keep it in my pantry from now on, just so we can make these cookies!

German Apple Pancake

My family loves this as a weekend breakfast treat. I double it and put it in a big glass lasagna dish and it works very well (also tried it in the Pampered Chef 12" family skillet, but it took quite a bit longer to cook). We serve it with some whipped cream, too. I often "cheat" and use two cans of sliced apples to save time. Makes it extra easy!

No Bake Peanut Butter Pie

Excellent, but we prefer chocolate ready-made crusts and drizzle chocolate syrup over the top so it's more like a peant butter cup dessert. I sometimes add chocolate curls (use a vegetable peeler on a candy bar) to dress it up for company.

Cannoli

We LOVED this filling! I drained the ricotta for two days (got busy and left it draining in the fridge longer than planned), but it must have helped because it was not runny when mixed as some others stated. Left out the almonds, but I didn't miss them. Great recipe, just be sure to fully drain your ricotta so it's a thicker mixture to pipe into the shells.

Butternut Squash Soup II

Excellent soup; very different. I did NOT puree all the vegetables, but purposely left some veggies out of the blender so there would be more texture (we prefer chunks/pieces rather than a smooth soup). I'd definitely make this again next fall!

Oven Roasted Potatoes

Very good and my kids loved them, too (I was worried about the crushed red pepper, but it was fine). Had to cook them a bit longer than stated so they'd be crisper, though. Next time, I'll try parboiling them first. The leftovers made a very tasty side dish the next morning; I pan fried them with a bit more oil -- yum!

Cream Cheese Penguins

Extra cute, and good even if it's not Christmastime. I made these for our staff appreciation luncheon and placed them on a blue saran wrap covered metal platter (so it looked like ice) with a paper that said "Our teachers are the COOLEST in town!" Also added some garlic powder as suggested in other reviews. Definitely a good attention grabber!

Cream Cheese Bars II

These were pretty good when I made them last year from the website, but a friend made them last week and they were FANTASTIC! Her recipe is exactly the same EXCEPT she beat the leftover egg white until frothy, spread that froth over the top layer of crescent dough, and then mixed 1/2 cup chopped nuts with 1/4 cup sugar and sprinkled that on top. The nuts really addto this (and also help to hide the seams if your dough doesn't cover completely as some reviewers stated). I made them yesterday for a PTO meeting and got several requests for the recipe (with the nuts). Great recipe!

Excellent tasting and healthy, too! I usually add is a tablespoon (or less) brown sugar -- seems to take away a bit of the spiciness and my kids love it. Our favorite way to eat this is with corn chips and fat free sour cream on top - yum!

Easy Seafood Fettucini

I've made this several times and have always received rave reviews! We usually use clams, shrimp, and scallops, and I add garlic salt and fresh ground pepper for more flavor. Half my family sprinkles hot sauce in their bowl, too. Thanks for the excellent recipe!

Raspberry and Almond Shortbread Thumbprints

I made these for my cookie exchange this Christmas, and everyone raved about them! They are so easy and taste "fancy," but to make them even more special, I added an almond slice to the top after baking (centered over the jam) and then drizzled the glaze over the whole thing. I also tinted some of the glaze green to make it more Christmas-y, but I think I prefer the white glaze! This simple cookies also freeze well if you wait until the glaze is "set" and then separate layers with waxed paper.

Garlic Crab Artichoke Dip

Best artichoke dip we've ever had! I've made this several times, and have substituted fat free mayo and FF sour cream and it worked fine -- a little thinner, maybe, but fine. We MUCH prefer the real crab meat to imitation for this recipe, although a friend uses imitation for it and it's not terrible. Thanks to Ilene for sharing this great recipe!

Christmas Creamy Egg Nog

This was excellent! I made it the night before my morning cookie exchange and had the rum available on the side. Best not to make it too far ahead, though, as it "settles." Still tasted good, but it separated overnight and had to be remixed before serving. (Next time I'll make it in the morning)
