Tilapia with Tomatoes, Black Olives and Corn

Could use more spice. I would not put all the juice in because it did not cook down at all. Very watery. Serve with rice or couscous for sure! I'll try it again, but I'm going to change it a bit.

Easiest Pot Roast Ever

This was really good. I put the veggies on top of the meat because I like the meat to be falling apart tender. I made it both ways (veggies on top and bottom of meat) and I prefer veggies on top.

Quick and Easy Pizza Crust

I have made this 8 times so far. It's really great. I roll it out really thin and poke holes in it with a fork. I like thin crust. I put cornmeal down on my pan underneath crust - tastes great! I have used this for large pizzas and individuals. I get three individual crusts out of one recipe.

New York Cheesecake III

Tasted great. Loved the crust. I undermixed because I read a review that said overmixing will cause cracks. Mine had lumps of cream cheese in it due to undermixing - so don't undermix like me. Mine had a small crack in it anyway. Still looked and tasted great. Will make again and use Kitchenaid mixer.

Spruced Up Mashed Potatoes

I added two cups of fat free sour cream. Next time I will put the cauliflower in the food processer before I mash it altogether. The hand beater doesn't break up the califlower as much as I wished it would and the end product was lumpy. Will make again.

Real N'awlins Muffuletta

Very good. I would say this has 10 large servings or 20 small servings. It cost me about $40 to buy the ingredients. Worth the cost considering how much is makes. Very good sandwich. Nice change from the normal tailgating foods.

Chocolate Pinwheel Cookies

I love these cookies. I used 3 tbsp of cocoa powder instead of the chocolate square to make the chocolate half of the dough. I got 24 good looking cookies but also 6 not nice looking ones because they were the ones cut from the ends of my roll - so that was expected. These cookies are very impressive looking and have a light chocolate flavor to them.
