Cabbage Beef Soup

Very good! Used a bag of pre-shredd cabbage and carrots, and followed some of the reviews and used one can kidney beans and one can chili beans. Also used a large 24 oz can of Rotel in place of the tomato sauce, and just 1 cup of water. Yes, it is very much like chili with cabbage, but I will definitely make again!

Very good! We followed pretty close to the exact directions, except I omitted half the butter - really didn't need it. I also didn't have fresh but dried basil worked fine. Only problem was the cooking time - it took much longer than 14 minutes to bake. Definitely add the feta on top!

Cinnamon, Spice and Everything Nice Cookies

Good, easy and most importantly, a great way to use up my cinnamon chips I had purchased with no idea what to do with them. I followed the recipe exactly, although I didn't flatten the cookies. Mine didn't turn out quite as crackled looking and stayed pretty high so they are quite chewy (which we like). I made these for a school bake sale and I think they will be a nice change from the typical choc chip and brownies. :)

Greek Couscous

mmm, the perfect side dish to a baked salmon and spinach dish. I followed one of the reviews and omitted the water and replaced it with more chicken broth. I also used whole wheat couscous and since I didn't have sundried tomatoes, I just used some homegrown tomatoes I had dehydrated. Absolutely delicious and I'm eating a bowl of leftovers right now. :) Next time I might add just a touch more broth.

Company Cauliflower

This is surprisingly delicious for the ease of preparation. It definitely took 30 minutes, not 20. I added the red pepper flakes as suggested and that was awesome. As I was making it I was worried I would need to thicken the sauce, but it thickened enough to coat the cauliflower.

Sloppy Joes

Quite tasty although I'm SO glad I read the other reviewers that recommended leaving out the sugar. It would have been way to sweet with it, but it was wonderfully tart without it. I used malt vinegar as I couldn't find my cider vinegar and that tasted just fine. I would maybe reduce the amount of ketchup just a little, as we couldn't eat these as sandwiches. The meat was really soupy. Definitely a keeper!

Maple Dill Carrots

I used canned carrots, just heated them before adding the other ingredients. I used 1 tsp dried dillweed and that was perfect, and Smart Balance spread instead of butter. All other ingredients were as written. Awesome, easy and will definitely make often.

Roasted Asparagus and Mushrooms

so easy and so delicious! I had some fresh oyster mushrooms and was planning on sauteeing them for our steak tonight, but found this recipe and it turned out amazing. The rosemary highlighted the flavors so well.

Zippy Cauliflower

yum yum! I had to make a few alterations since I got halfway through cooking it and realized I was out of milk and cheddar, but it was delicious. I used water with a little dry milk, and mozzarella. Used very hot salsa (and probably twice what the recipe called for) to help thin the sauce a bit. Awesome!

Crescent Pizza Pockets

When making these, I got a bit frustrated and thought they wouldn't turn out. I used Italian seasoned tomato paste instead of sauce (excellent idea), a little less pepperoni and added kalamata olives. I, like other reviewers, just folded them in half rather than diagonally but that worked just fine and didn't affect the taste, so no problems there. But, I couldn't have used any less of the other ingredients without making it almost empty and it was completely stuffed - I couldn't ge the sides sealed all the way and thought I'd have a gooey mess. But, the ingredients didn't ooze out and it stayed in a nice pocket. Flavor - it was ok, and I'd give it 3 stars for that. However, hubby loved them and for ease of preparation I'll give it 4 stars.

Blueberry Banana Bread

oh wow, this was delicious (I did make several alterations, and it takes a LOT more time to bake than the directions indicate). I used half whole wheat flour and half all purpose, used half shortening and half applesauce, used 2 eggs and 4 egg whites. I also added pecans and a dash each of cinnamon, ginger and nutmeg. I will be making this again next week for a bake sale - absolutely the best!

Shrimp and Feta Cheese Pasta

Pretty good, very easy. Next time I will use less pasta, more tomatoes and a little more cheese. I also used fresh basil. Had good flavor but a little skimpy on the shrimp. Will definitely make again for ease of prep and fresh flavors.
