Vegetarian Gravy

This was really delicious! I used un-chicken broth instead of vegetable broth, omitted the salt and used poultry seasoning instead of sage because that's what I had on hand. Thank you for the wonderful addition to our Thanksgiving dinner!

Apple-Cranberry Crisp

This was really delicious! I had to use a 9x13 pan to hold all of the apples. Because of the larger surface area I doubled the crumb topping. Other than that I followed the recipe exactly.

Whole Wheat Zucchini Herb Bread

Very good bread! I don't have a bread machine so I followed the instructions that another reviewer recommended. I had to use at least a cup more flour than the recipe called for. I also omitted the basil and used Italian seasoning instead. I baked the loaf at 350 for about 45 minutes (loosely covering with foil towards the end so the top wouldn't burn).

Pistou Soup

Really delicious! I was using up some garden veggies so I changed things slightly. I cut back on the green beans because I only had a few and only used two potatoes. I also added spinach and wilted it right before removing the soup from the heat.

Nutty Quick Bread

I didn't change a thing (although I baked it at 350). It's a great easy recipe. This bread cooks beautifully and comes out of the pans nicely.

Jalapeno Ranch Salad Dressing

I had to bring a salad for Christmas dinner, so I made a couple of dressings to go with it. This one was the biggest hit! It was so easy too! It would also be excellent as a dip or on top of a baked potato.

Butternut Squash Soup with Spinach Ravioli

I used vegetable broth to make it vegetarian. I also doubled the amount of squash because that flavor wasn't very strong. I only had wild mushroom ravioli on hand, which was fine, but next time I'll use what the recipe called for. I will also probably double the amount of butter. Overall, it's a very good soup!

Breakfast Cake

I made this because I wanted coffee cake but didn't have any eggs on hand. I took the suggestion of others and used butter instead of shortening. I also added a tsp of cinnamon, a pinch of cardamom and a dash of nutmeg to the batter. Instead of the brown sugar and cinnamon on top I made a crumb topping by mixing 1 c of flour, 4 TBSP melted butter, 3/4 c brown sugar and 1 tsp cinnamon and sprinkled it on the batter before putting it in the oven. This won't become my favorite coffee cake, but it is very good and I would make it again.
