Herb Roasted Pork Loin and Potatoes
The pork roast turned out well, but I didn't think that the seasoned potatoes were worth the extra step. I also added carrots and broiled the vegetables at the end for a crispier finish.

Eggplant Tomato Bake
This was a good way to use eggplant, although the recipe should note the eggplant should be peeled.
