Slow Cooker Beef Stew IV

I'm a little surprised by all the high ratings. Personnally, my husband and I thought this was somewhat bland. And I even added a bay leaf, mushrooms, and green beans.

Fruit Dip II

This was good. I added some vanilla and served it with strawberries, apples, fresh pineapple, and cinnamon graham cracker sticks. All were great with the dip. I also added some red food coloring which I didn't like because it gave it an artificial appearance (duh).

Tzatziki Sauce

Truly excellent! I do add 1/3 cup mayo and omit the oil. I can eat it by the spoonfulls - seriously! I make this as a sauce for Souvlaki (also on this website) placed in pita pockets with diced tomatoes. Souvlaki with Tzatziki sauce is my husband and I's all-time favorite dinner. Definitely seed, chop, salt, and drain the cucumbers and use fresh, squeezed lemon juice. I do not need to drain the yogurt (but I don't use low fat) and I don't recommend using a food processor or blender. MIX BY HAND to maintain some thickness.

Pistachio Fluff Fruit Salad

This is one of those recipes either you love it or you hate it. I happened to like it but felt it was a little sweet. The bananas are a must - just add them right before serving. But even brown, they still taste good. I agree with another poster who said 8 oz. of cool whip would be plenty. I added chopped pecans which I felt was a worthy addition. This makes a ton! I doubled the recipe for a pot luck and couldn't fit it in the biggest bowl I own! The recipe, as written, definitely serves more than indicated.

Southern Grilled Barbecued Ribs

I prefer "fall off the bone" type of ribs. Next time I will boil them or bake at low heat until tender. But the sauce was excellent.

Southwestern Turkey Casserole

This is very good but too rich. Next time I will substitute a can of green enchilada sauce for the cream of mushroom soup and sour cream. I used the meat - about 3 cups - from two rotisserie chickens and it made for a very tasty dish. I also used more cheese than what is called for.

Maple Glazed Ribs

I thought these were good but I would have preferred a BBQ sauce. My husband loved them though which surprised me because of the sweetness, but it wasn't overpowering sweet. Maybe it depends on the amount of glaze you put on while grilling. To answer a recent poster's question, I believe baby back ribs are the best and most tender ribs you can buy. But I'm always wary of meats on sale which often seem to be less than good.

Whole Wheat Banana Nut Bread

Call me chicken I guess. I used 1 c. whole wheat and 1 c. white flour. I also substituted brown sugar for honey, oatmeal for flax, and chocolate chips for nuts only because I didn't have any of these ingredients on hand. But the outcome was delicious. Next time, I'll take it out of the oven after 50 minutes. The loaf was a little dark.

BBQ Pork for Sandwiches

These were very good. However, I left the ribs whole as opposed to shredding them for sandwiches. I don't care for Sweet Baby Rays BBQ sauce so we tried that new Cattlemen's Choice. We're kind of spoiled on homemade sauce but my husband and I felt it was pretty good for being bottled.

Peachy Time Tenderloin

Excellent! The pork stayed tender and juicy and the flavor was wonderful. It wasn't very spicy either. I was able to serve it to my 21-month old. Will definitely make this one again.

Steak and Rice

I'll give this 3.5 stars. In my opinion, this recipe is average - not the best but not terrible either. I used boneless sirloin, added chopped onion, decreased the water by 1/2 cup, and added sliced mushrooms toward the end. I was able to serve it with brown rice so it gets points for that.

Fried Steak with Peppercorn Gravy Sauce

This was delicious and so quick and easy. Didn't add the peppercorns - don't like them. This would be good on almost any steak. We marinated and grilled ours. It was also excellent on the mashed potatoes. My 19-month old kept asking for "more gravy." I'm spoiled; I won't eat steak without it.

Harvest Rice Dish

Fantastic! I did, however, cook the wild rice separate (just in boiling water) because the directions on the box indicated a longer cooking time than the brown rice. I doubled the recipe and froze portions for future dinners. However, neither my husband or my 20-month old cared for it as much.

Best Ever Tuna Salad

This was good but not extraordinary. It just wasn't worth the time or the ingredients. Just goes to show, IMO, that sometimes the most basic recipes are the best recipes. On the other hand, I served the leftovers as a dip with 7-grain crackers and my guests loved it. I substituted shrimp for the crab.

Baked Breakfast Burritos

I give this a 3, my husband gives it a 4, my 18-month old, if he could, would give it a 1, but he doesn't like eggs. It lacked flavor for me. However, I didn't measure the salt and didn't add the hot sauce. Maybe that's why. While it didn't taste bad it was kind of odd tasting, nonetheless. I doubt I'll make this again without modifications. Maybe a can of green chilies would be good.

Candied Sweet Potatoes

Marinated Pork Tenderloin

This was good. I prefer grilled meats to oven-cooked whenever possible but had to use the oven this time. I felt it needed something so I prepared the cooked apple topping from the Caramel Apple Pork Chops recipe. A delicious addition I highly recommend.
