About this Cook
I am a married mom of two. Jack was born in 2003 and Kaya in 2006. I've always loved to cook but with two young kids who always beg for my attention (although I'm happy to give it), I'm always looking for quick meal ideas that will satisfy everyone - not an easy task. I prefer healthy, natural, and/or organic foods but love to splurge once in a while on fattening comfort foods.
My favorite things to cook
Flank steak on the grill, my meatloaf, salads, and the list goes on.
My favorite family cooking traditions
slow cooked Prime Rib and homemade Red Velvet Cake (the original recipe) for Christmas is our all-time favorite.
My cooking tragedies
When I was much younger, I made a chocolate-mint cake from scratch for a large family gathering. I had used spearmint extract instead of mint extract thinking it wouldn't matter much. Big mistake. It was terrible. Not to mention I had refrigered the cake layer so they were dry.

Cod with Italian Crumb Topping
A very good recipe for crispy oven baked fish. I substituted Old Bay seasoning for the Italian and added a couple dashes of garlic salt. I took another reviewer's suggestion and cooked it at 375 for 30 minutes. It came out perfect.

Ultimate Grilled Cheese Sandwich
This was good but I was hoping the granny smith would give it a little more pop. The fruity taste was rather subtle. I may add some craisons next time. Otherwise, a very good sandwich.
