I just wanted to add that my own change to the recipe was to add a ton of vanilla to the wet ingredients. These pancakes turned out amazingly well! They were light and fluffy and incredably easy and quick to mix up. I'm never going with a boxed mix again! I didn't make the syrup, but then we've never had any with chocolate chip pancakes.

These are just like the mini cheesecakes my mom's been making for years. Rather than crumble the vanilla wafers, I plunk a whole wafer down each paper muffin cup.

I also halved the amount of dressing I made and was very happy with the results. Personally, I would take care to make just enough as this salad does not make for good leftovers.
