Roast Philippine Chicken Adobo

Reviewed: May 7, 2012
I liked everything about this method except for the harshness of the white vinegar. If I were to try it again I would use coconut vinegar...if that doesn't help then I'll delete this recipe.

Delicious hot from the oven! The sprinkling of sea salt really enhanced the chocolate flavor.

Unbelievable Chicken

This is a perfectly adequate preparation for chicken breasts, but I was not blown away. I followed the recipe to the letter.

Singapore Noodles

Reviewed: Aug. 13, 2011
While this recipe was pretty good, I probably won't be making it again. I ended up with a wok filled with the vegetables, meat and sauce, which we served over the noodles (tossed w/sesame oil) because it wouldn't all fit in the same pan. My only complaint was that the curry powder tasted a little raw. A curry paste may have been the better way to go.

Truck-Stop Buttermilk Pancakes

Reviewed: Aug. 2, 2011
We hosted ten 16-year old girls for a sleepover who were treated to these homemade pancakes. They loved them! I followed the recipe exactly as written, and made the whole batch. It made a ton, but only about 5 were leftover.

Sausage, Kale, and White Bean Soup

Delicious. I didn't have a full cup of shallots so I filled in with yellow onion and leek. It turned out great.

While this recipe was super easy, none of us felt it was chocolatey enough.

Italian Sausage Soup with Tortellini

Reviewed: Jun. 12, 2011
Great soup recipe. Although I made several modifications. Instead of fresh basil I used 3 tablesppons of store-bought pesto. Instead if tortellini I used raviolini, plus I added a 5 oz bag of baby spinach and increased the garlic to 6 cloves.

Thai Chicken Satay

Reviewed: May 23, 2011
After having been too daunted by the thought of making satay at home for years, I decided to give them a try. Guess what? They are way easy to make. This is a good recipe which I followed precisely and got family-pleasing results. I will definitely be making them again (and often). Thanks!

Oven-Fried Pork Chops

Reviewed: Mar. 25, 2011
The pork chops I used were thick and bone-in, so the cooking time ended up being closer to an hour. This was an easy, family-pleasing weeknight dinner. I'll be adding this to my favorites file. (Aside from the cooking time I made no other changes.)

Oxtail Bourguinonne Recipe at Epicurious.com

Reviewed: Feb. 26, 2011
Excellent. I did not flour the oxtail, but dried it thorougly before browning it in small batches (flouring the meat always ends up in burned flour for me). I added chunks of carrots and a box of chopped tomatoes before putting the whole thing in a 325 degree oven for 4 hours. I did not add mushrooms or carrots at the end. Served with baked cheesy grits, sauteed collard greens, and a sprinkling of chopped fresh Italian parsely.

Cheesy Baked Grits

Reviewed: Feb. 26, 2011
These are trouble (in a good way). I liked that I could make them ahead, and that they were easy to assemble. They were a welcome alternative to mashed potatoes. Tonight I served them with braised oxtails. The only change I made was to omit that final 1/3 cup butter at the end....the first 1/2 cup already felt like pushing the envelope butter-wise (I did use whole milk, though).

Beef Caldo with Spinach

Reviewed: Feb. 23, 2011
This is a fantastic stew. I made it for a group of eight people (ranging in age from 6 to adult), and everyone found someting to like about it. I added big chunks of fried carrots (using the same technique & oil that I used for the potatoes) because I felt the tomato-y-ness of it need some sweetness to balance the acidity. I appreciated the reasonable price of the cut of meat called for in this dish when feeding big eaters.

Lemongrass Beef and Onions over Rice Vermicelli (Bun Bo) | Williams-Sonoma

Reviewed: Feb. 16, 2011
I was able to get this on the dinner table within 45 minutes of walking in the door. I grilled the flank steak (no marinade), accidentally burned the shallots (they were still delicious), and didn't soak the noodles for quite long enough. Even with all that my family liked it. I will definitely make again, but will allow more time and pay closer attention.

Butternut Squash Supreme

Reviewed: Nov. 26, 2010
I made this for Thanksgiving using butter instead of margarine and cream instead of milk, plus following the advice of other reviewers I sauteed the onions (oh, and I added several cloves of pressed garlic) first. The thing that surprised me was how much my family liked it. Neither my daughter nor my husband like squash, and both of them actually commented on how good it was.
