About this Cook
I am a stay-at-home mom of a 2 little girls. I enjoy cooking and baking. I love experimenting and trying new recipes. I grew up in a houshold were we rotated a lot of the same meals and relied on convienience foods since both of my parents worked full time jobs. So it has been my goal to think outside of the box and to try new foods.
My favorite things to cook
I love to try and cook almost anything! I enjoy making lasagna, fried rice, egg rolls, stir-fry, just to name a few! I also enjoy baking brownies, cookies, quick breads, and cheesecakes.
My favorite family cooking traditions
My vietnamese mom makes the best fried rice, egg rolls and stir fry! Whenever we would have company, this was always on the menu! I can remember her letting me help make the fried rice. A few years ago, my sister and I watched her cook those three items and made recipes for them and now I make them regularly.
My cooking triumphs
I make a great lasagna. I always double the recipe and freeze one. I would say learning how to cook my mom's signature Vietnamese meal has been a great triumph. I can now pass it on to my daughter when she's older. I'm not much of a cake decorator, but I made and decorated my daughter's princess birthday cake for her 3rd birthday. I surprised myself!
My cooking tragedies
Main course: Stuffed Peppers! The rice didn't cook enough, so it was a bit crunchy. My husband & I couldn't eat it! Dessert: Tiramisu! I think I soaked the ladyfingers in too much coffee. It was pretty mushy!

Butternut Squash Soup
This soup was so yummy! When I had planned to make this for dinner my husband told me that he does not like squash, so I told him he could heat up leftovers from the previous night. He decided that he would eat the soup and he loved it! The cream cheese is the key ingredient. I used reduced fat and only one package...very creamy and thick. I did not have marjoram, so my husband looked up on the internet and found oregano as a substitution. Looking forward to eating for lunch tomorrow!

Sangria! Sangria!
Made a double batch and was glad I did...I forgot the OJ, I let it sit overnight, but tried a glass before bedtime and I rested well. ;-)

Double Tomato Bruschetta
Excellent! After toasting the bread, I rubbed a clove of garlic on to the hot bread. Great appetizer!
