Stuffed Peppers

This was my first time making stuffed peppers. Instead of onion powder, I sauteed about a 1/2 cup chopped onion in a little olive oil, drained the oil, then added the beef. I also added about 2 tbs of grated parmesan cheese to the rice/beef mixture. I didn't have worcestershire sauce so I thought the saltiness from the cheese would help. I sprinkled some cheese & bread crumbs with some sauce on top before baking. I guess I am used to my mom's stuffed peppers...the mixture was flavorful and moist but I like the "juice" at the bottom of the pan. These didn't have that. Maybe I did something wrong? I will add more pureed tomato next time. Otherwise these were so good!

Picante Chicken

Easy and dee-lish! Perfect for 2 busy people like my hubby and I. I added 1 tsp of minced garlic and a few generous dashes of Red Hot. I will make this again but will try it in the crock pot like others have done. Thanks for sharing.

Cream Cheese Kolacky

The cookies are so good! I've been making these for a few years usually at holiday time. But they are delicous year round. I've used boysenberry, raspberry and apricot jam. All work well. Also I cut mine with a round cookie cutter, fill them with jam and then close them around the edges with a fork....they kind of look like pierogi's. This is how my Poloish friend taught me to make them. Make a large batch, they go fast!

Chicken Taquitos

Awesome!! I baked these instead of frying and brushed some olive oil on them. I also used bottled, fire roasted green salsa from my local market, Wegman's. The smoked cheddar was a perfect addition. I served them with guacamole, sour cream and mild salsa. Yum-O! I will serve these again for sure.

Apple Enchilada Dessert

This was very good. I took the advice of the other reviews and cut down the brown sugar to 1/3 cup but kept the white sugar at about the same. I also added a few dashes of nutmeg and 1 tsp of real vanilla. I cut up 2 granny smith apples, steamed them in the mic and added a little sugar, then added to the canned apple filling. We served it warm with vanilla ice cream. Everyone really like this. It's a keeper and tastes great for breakfast. ;)

Zesty Coleslaw

Really good. I used apple cider vinegar b/c that's all I had and it was fine. I also used a little less mayo than what the recipe called for then added 1 1/2 tsp of water. It worked out...but next time I'll be sure to have more mayo on hand!

Chicken Enchiladas II

Dee-lish!! I did add a few other things to spice it up as others suggested. Alternative for frying the corn tortillas...lightly spray both sides of the tortillas with cooking spray or brush a little vegetable oil and place on a baking sheet at 350 for about 2-3 minutes or until soft & warm. Less fat & mess!

The Best Vegetarian Chili in the World

WOW! This was a hit at our Super Bowl party. I made this and a meat chili. Everyone including my die hard carnivore husband went for this. I goofed on the shopping list and bought only 1 package of vegetarian burger crumbles (I used Boca brand) but it was fine. I used 2 cans of tomatoes rather than 3. I also added some red hot pepper flakes for some kick. Very Weight Watcher friendly too. Awesome!!! I will be making this again!

Hot Pizza Dip by 3-A-Day™of Dairy

This was good but a little bland. I forgot to buy the pepper so I chopped up some pepperoni, added garlic powder and used Emeril's Italian Essence along with the oregano. I also put a tablespoon of the pizza sauce in with the mixture. I garnished it with some jalapenos and pepperoni slices. It tasted much more flavorful this way. I would make it again doing it this way.

Buffalo Chicken Dip

I agree with most everyone else. Use fresh chicken as opposed to canned. I also layer the ingredients then bake it. Cream cheese mixed witht he blue cheese. then the chicken mixed with some hot sauce (depending on your heat taste) and some of the cheese. then sprinkle with the rest of the cheese. I also put a little crumbly blue cheese and sprinkle it on top on top. It's always a hit!

Creamy Dill Cucumber Toasties

I LOVE this recipe. It's easy and tastes AWESOME! It is a little time consuming to put together though. So if you are like me, and put things together for a party at the last minute, you need to make a little time. You may want to add a dash or 2 of dill in the cream cheese mixture as well.
