Boscobel Beach Ginger Cake
This cake is fantastic! It just dances on your tongue! It was so moist! This is not your typical ginger cake--there is no molasses. So it is a nice light cake with lots of ginger sparkle. And I didn't even add the fresh ginger the recipe called for--just the powdered ginger. It was quite a hit with my guests. I made an orange glaze for the cake, but really...it was pointless. One: it didn't need any embellishment, and two: the orange taste was totally overruled by the ginger flavor. Go the powedered sugar route as she says. Thank you Margorita Whyte for a wonderful recipe!!

Summertime Tropical Fruit Salad
Just had this for a "Not-Luck" Lunch. It was great!! People were eating the topping by itself at the end! Delicious and refreshing. A little bit of the tropics in frosty January!

Pumpkin Roll III
Wow! I just cannot say enough good things about this recipe! I don't know if I would call this easy...I don't think any rolls ever are...but it was SIMPLE. And the finished product is just soooo impressive. The cake was easy to roll with no cracks (always my big problem when making a roll cake), and the filling/icing is just SUBLIME! It's a wonder any of it got on the cakes! Thank you!
