Carrot Oatmeal Muffins
Really excellent. Everyone loved them! Left the raisins out because the family won't eat them. Didn't use all the pineapple juice--the filling would have been way too runny. Might add walnuts next time.

Coffee Liqueur Bread Pudding with Caramel Sauce
One cup of Kahlua is way too much--the dessert exudes alcohol fumes when served....I don't know if that's in error, or if others expect that in their food.
