Simple Beef Flavored Gravy

Used Extra Virgin Olive Oil instead of the butter and it was really good. Will use this when I need a gravy and don't have enough drippings.

Curried Red Snapper

Absolutely delicious! Went perfectly w/Jasmine rice & sauteed green beans. The flavor is so nice and it's a light dish. It's one of those dishes that leaves you feeling good all over & it's healthy too! I used extra virgin olive oil instead of butter, & sauteed the onions (only one onion) & the celery a good 15 mins to get them very soft. Then added 1 T. flour and the curry/salt mixture & cooked another 5 mins to meld flavors. Then added about 3/4 c. milk. Soooo good. You'll want the extra sauce cuz it's really good.

Chicken Piccata II

This was way too lemony for us ~ I used fresh Meyer lemons. The chicken itself was tender and flavorful, but we just didn't care for the lemon sauce. I ended up throwing out the sauce & just making a flavorful pasta side dish.

Whole Wheat Snickerdoodles I

These are delicious and healthy! I used Whole Wheat Pastry Flour instead and they were perfect. I usually make Mrs. Sigg's Snickerdoodles, which are the best, but not as healthy.

Almond-Topped Fish

This is restaurant quality for sure! Absolutely delicious. I used fresh Wild True Cod from Costco and cut the amount of mayonnaise by half & added a little olive oil to the mixture. I used Old Bay Seasoning instead of season salt, sprinkled a little garlic powder, and kept everything else the same. I baked the onions a little longer before adding the fish. Just watch the fish to make sure you don't overcook & it will turn out divine! Served with Emerill's Herbed Rice and Sauteed green beans with mushrooms. Yummmmm

Party Pinwheels

This got rave reviews at the potluck and not one was left! My husband loved them as well. You can really do alot with these. I ran out of red bells and used chopped tomatoes for the rest, used lite cream cheese and 3/4 pkg of ranch dressing (which worked perfect). Added different deli meats (ham and turkey were favored). Also to some of them, I added a little dijon mustard on top of the cream cheese mixture - which was also good! Some got green leaf lettuce too... all worked well! Just make sure the liquid is out of the more wet ingredients (like the lettuce, olives, tomatoes).

Cream Cheese Frosting II

This was fantastic with the Pumpkin Cake III from this site. I made the following modifications, however. 1/4 C. butter instead of 1/2 C.; 2 C. confectioners' sugar instead of 4 C; 1 tsp. vanilla; and added 2 T. milk to make easier for spreading on cake. MaKe sure cake is fully cooled before spreading. Really great.

Pumpkin Cake III

This is amazing! Everyone at the potluck loved it & it was gone in no time! Even my husband, who doesn't like pumpkin, LOVED this! It is so moist & great flavor. I didn't add the walnuts, and I sprinkled some nutmeg, cloves, & all spice to the dry ingredients, & heaping tsps of cinnamon. Put in a bundt pan & cooked about 45 mins. Frosted w/Cream Cheese Frosting II by JJ from this site, which was also amazing w/slight modifications (see my comments on that review).

Seven Layer Taco Dip

This was delicious. I made a couple of changes based on what I had on hand & it really turned out great. It was the first dish to go at the potluck. I mixed with the refried beans a 16 oz can of Dennison's chili con carne w/beans (this added a lot of great flavor). I added 3/4 pkg. of the taco seasoning & about 1/4 jar of taco sauce to the sour cream/cream cheese mixture. Left out the bell pepper & everything else stayed the same. If I had avocadoes, I would have added a layer of guacamole ~ that's always a nice addition.

Red Velvet Cupcakes

These are really delicious & moist! I used low-fat cream cheese in the frosting & didn't use as much confectioners sugar (I don't like it too sugary) and they were just right. My husband and I couldn't stop eating them ~ and our company enjoyed them as well. A must try ~ you'll be happy you did.

Amy's Cilantro Cream Sauce

Amazing sauce! Goes perfectly with Southwestern Egg Rolls from this site. I used low fat cream cheese and low fat sour cream. Didn't have celery salt, so just sprinkled a little salt (really don't need much salt). This is divine!

Southwestern Egg Rolls

Absolutely divine! I used about 1/3 c. fresh chopped spinach instead of frozen; 1 T. Jalapeno peppers diced; 1 T. cilantro instead of parsley; and egg roll wrappers instead of flour tortillas. Instead of deep frying, spray the pan with olive oil & also spray the tops of the wrappers with oil and bake at 450 for about 10-15 mins until lightly browned. They are wonderful with Amy's Cilantro Cream Sauce from this site.

Broiled Tilapia Parmesan

This was delicious and like a dish in a fine-dining restaurant. I didn't have celery salt, so I used some Old Bay Seasoning & Adobo Seasoning, and I sprinkled garlic powder as well, and used lite mayo. I soaked the fish in milk to take away any fishiness. Great flavor!

Slow Cooker Carnitas

This is really good, but you definitely need to triple the dry ingredients. Their was a lot of broth, so no need to add anymore, but the seasoning/flavor was lacking and I even doubled it. I wouldn't triple the cinnamon, however. I would leave it at 1/4 tsp and triple all the other dry ingredients. I'll add mild green chili's next time.

Pollo (Chicken) Fricassee from Puerto Rico

Delicious! Awesome flavors. I didn't use drumsticks; instead chicken breasts & thighs. I added sliced carrots and didn't need the salt. It was very flavorful. Served with white rice, whole beans, and salad. Nice, healthy meal. Mine was done in 5 hours on low.

Beef Tenderloin With Roasted Shallots

Definitely 5 stars! Very tender and great flavor. I put the wine/broth with the shallots & bacon in a blender for a smoother consistency and it was great. I used red wine & a little brown sugar since I didn't have port. Next time, I am going to make the Mushroom Sauce from this site for this recipe because I think it would go really well with it. I've used it many times on pork tenderloin & other roasts and it's AMAZING! Served this with french green beans with cashews, butter, & parsley; carrots w/dill & brown sugar from this site; and garlic mashed potatoes. Scrumptious!

Banana Cream Pie I

Delicious! I gave this 5 stars with the following modifications: Used 1/2 cup of white sugar and used flour & corn starch equally measured in the 1/3 cup. You need to use whole milk -- anything less than that will make it runny and it won't set right. Make sure the bananas are very ripe for the full banana flavor. Cook the filling so that it turns out like custard. I cut up the bananas and put them in the custard. I baked the pie as directed and it turned out the perfect consistency! Also was very happy with the "Easy Pie Crust" recipe from this site & got many compliments on this crust! I used the "Whipped Cream" recipe from this site & it was very good on top of the pie.
