Asian Cucumber Thai Salad
Amazing! I used 2 medium cucumbers, substituted a yellow onion, one serrano pepper, added 1/2 a sweet orange pepper, 1/2 cup of fresh chopped cilantro, and 2 T sugar. Absolutely incredible flavor that became more and more delicious each day. My only warning: if you don't like the taste of rice vinegar or ginger, stay far away from this recipe.

Red Chicken with Vegetables
Delicious! I made some adjustments: diced tomatoes instead of paste, no potatoes, and 1/2 chicken broth rather than water. The flavor was amazing, and it was fairly easy to make, with some organization. My only complaint is that it needed a lot of salt as it simmered - but that may have been because I didn't use the tomato paste? No matter, I will definitely make this again!

Quick and Easy Chicken and Tomato Pasta
A very fresh tasting pasta, great for summer! I added fresh zucchini, fresh mushrooms, fresh garlic, fresh shredded basil and parsley, plus chopped red pepper and carrots. Draining the tomatoes as another reviewer suggested would be helpful, but altogether a very delicious and simple meal.
