About this Cook
I have spent the last 15 years living overseas in support of my husband's career. We have lived in Pakistan, Tokyo Japan and Shanghai China as well as a short stay in the USA. We have 5 grown children (just one teen at home now) and 4 beautiful, fun grandchildren.
My favorite things to cook
I guess I like to cook main dishes the most and play with things to try to make them better. Problem is, when I get something really great, I can never remember the next time what I had done! I go on baking kicks until we all gain so much weight, I have to stop!
My favorite family cooking traditions
I'm a bit of control freak, so I like to host rather than be hosted. Often to my detrement, as I get exhausted with pretty bad arthritis. Many of our funniest family stories might include a tale of "Mom was so tired by that point, she burst into tears"! One of those time was with our family tradition of shrimp cocktail as an appetizer to Christmas dinner ~ in error I had bought the super hot seafood sauce and my five little kids couldn't even eat it. Hubby rescued the day, by rinsing their shrimp and making some mild seafood sauce with ketchup and horseradish.
My cooking triumphs
An emergency camping meal. We got to the campsite to find a major storm starting and had to cook fast & furious to get warmed up. As we then planned on leaving early in the morning, I threw sausage, pork, beef and all kinds of veggies into a pot. My husband recently brought that up when we were discussing the show "The best thing I ever ate" Of course, I have never been able to duplicate it :)
My cooking tragedies
November 7/10 Made a leg of lamb roast for dinner. Used some different seasonings in the rub this time, so I thought that was the funny smell. My roast potatoes came out gorgeous, peas & carrots perfect and the grvy a beautiful rich color. We sit down as the minute I take a bite, I know ~ the meat is bad. Dh and Ds carried on for a few minutes until they got nervous too. I spat my first bite out, but had some of the gravy, so I could get a bit sick. But dh and ds are sitting here looking at each other, wondering who will puke first. Thank goodness I just found out where the hospital is in our new hometown! On the bright side, at least didn't have company :)

Naan
This was great!!! I did it in my bread machine on the 'dough cycle', rolled into balls and let rise under a towel 30 minutes. As per some suggestions I added 1/2 tsp of baking soda to help the dough bubble when cooking; substituted the milk for greek yogurt and reduced the flour to 3.5 cups for using the bread machine. Then rolled into oblong shapes (see my pictures). We grilled it on LOW direct heat on the BBQ (propane). I did start them on indirect heat for my sample but it not bubble at all and dried out. I probably did about 3 mintues per side and sprinked with seasalt as they came off the grill. Kept them warm in a large foil pouch (vented) while the chicken finished. We wound up handing some over the fence to curious neighbors because it smelled like heaven!! A new family favorite!

Spicy Chipotle Grilled Shrimp
Wowzers! For the 1st time ever, I bought Chipolte peppers in adobo sauce! I did a tiny finger taste before adding them to the marinade and decided we were not really made for each other :) I added 1 tsp of finely diced hot red pepper and added no cayene as I know I am not a fan. I still found them a bit spicy, but DELISH!!!! I only realized now as I came back to review that I doubled the red pepper flakes by mistake. We loved them! Served with cuke/sweet pepper salad tossed in tzatizi dressing. Rice would have paired nicely also, but dieting and without it, this recipe and salad is in the rules!

Tree-Shaped Crescent Veggie Appetizers
I took this to a work party and not only did it get great reviews for flavour but it was the only show stopper there! I did one very large tree on a foil oven liner. I used Philly whipped herb & garlic cream cheese and multi colored peppers, finely chooped heart of celery and green onion for decorations. I put another large cookie sheet underneath to transport and it held up perfect for the trip!
