Cumin and Coriander Chickpea Salad
I threw in 1 teaspoonful of ground coriander with this, but nothing else extra. When I took it to work everyone commented on how awesome it smelled. One of my coworkers thought it smelled good but wouldn't eat it because she said she hated garbanzo beans. After watching me munch for quite a while I convinced her to try it. She couldn't stop eating it! I brought extra for her the next day so I could have mine!

Creole Cornbread Stuffing
This is an excellent recipe but I will have to lessen the 'heat'. We are not from Louisiana so maybe we just can't handle the spiciness! We can't eat more than a small portion at a time because it is very spicy. I would make it again-just with less cayenne pepper and maybe one green chili.

Zesty Hominy and Cheese
I made a huge spread for Thankgiving with a 22 pound turkey and a lot of hungry people. It is the truth that they looked at me like I was nuts when I said, "there's the hominy casserole" and it was the first thing completely gone! I will *definitely* be making this again and again! I Yankees (northerners) and Southerners and everyone like it.
