Crema de Calabazines

Reviewed: Dec. 18, 2009
Used soft cream cheese instead of velveeta and it was super tasty and made a fast cream of zucchini soup on a busy week night. The other change was adding a Tbsp of beef bovril bouillon since i had no chicken bouillon powder. My 2.5yr old son and I enjoyed it.

Instant Russian Tea

Reviewed: Dec. 8, 2009
I wanted to make a tea drink mix to give away as a gift to my sister in law and brother in law who love tea but I couldn't find instant black tea so I went to the chinese grocer and got powdered green tea instead. For the lemonade drink powder i used one 6g pouch of unsweetened lemon lime koolaid and only added 1/4 tsp allspice. The mix tasted nice but the green tea powder left lots of sediment in the cup I made, but that can be fixed by straining it when making yourself a cup. The sweetness is just right for me.

Pumpkin Pie I

Tasty pie and I am not a big fan of pumpkin pie. This pie has to sit overnight I think in order for the flavours to meld. I think I have found the recipe which my husband approves greatly. Thanks!

Lemon Mushroom Herb Chicken

Reviewed: Nov. 5, 2009
Big wow in taste and for serving to guests I'd say. The only difference I did was slice the chicken into thin strips instead of leaving them whole, and I added fresh diced mushrooms, diced red peppers and 1Tbsp of capers to the sauce while it was simmering.Chicken was tender and super tasty. Thanks for a great recipe

Chicken Pepper Steak

Reviewed: Oct. 20, 2009
Good recipe. The only thing I modified is adding an extra pepper and simmering the chicken in a covered skillet for 30 minutes in that first step (added canned diced tomatoes while it simmered). The chicken was super tender and fell apart and the dish had plenty of sauce.Served with basmati rice.

California Salad Bowl

Reviewed: Oct. 19, 2009
I didn't have an avocado but had store bought guacamole in the fridge so I used some of that and the dressing was tasty even if I was skeptical when making it. The 1st bite of my salad convinced me to keep this recipe.Don't be fooled by the light greenish colour of the dressing.

Michelle's Famous Washed Cranberry Sauce

Reviewed: Oct. 9, 2009
This is a great starter recipe but I have used some reviewers tips about replacing the water with OJ and adding a diced apple, 1/2 cup sultana raisins with the cranberries and using 3/4 cups brown sugar instead of 1/2cup (hubby likes a sweet sauce). Cooked it for 8min because we like a sauce that is a bit thicker.

Zucchini Alfredo

Reviewed: Oct. 8, 2009
Great tasting recipe. The only thing I did differently is make my own alfredo sauce without the use of cream cheese. I am sure with the cream cheese it is good too and perhaps cheesier and heavier.

Bacon Cheeseburger Upside Down Pizza

Reviewed: Oct. 1, 2009
This recipe is pretty good the way it is but adding your personal touches will make it even better.I just added garlic, salt and pepper to the meat mixture and omitted the bacon. The crust is plain but still good and just the right amount of crust to our liking. It is easy to add more flavour to it if you'd like. Definatly a keeper for a quick meal on busy weeknights.Added some ceasar salad on the side.

Sweet and Sour Meatballs (Suan T'ien Niu Jou Po Lo La Tzu)

Reviewed: Sep. 21, 2009
Good recipe. The beef meatballs were ok but maybe if they were pork the meat taste would be milder and more complimentary to the sweet sour sauce. Will have to try it with ground pork next time. I started the sauce (added a few chili flakes) in my skillet but then let it thicken with the meatballs in my slow cooker for 4 hours on low (longer is better) but added the veggies only at the last hour of cooking. The meatballs were softer after soaking in the sauce overnight so it was better the next day.I'll make this recipe again since I can easily tweak it to my liking if I want some extra flavour.

Great tasty sandwich.I used Montreal smoked meat with some mozzarella and extra old cheddar slices in between the layer of meat. Also fried up one of my small sized walla walla onions and added it in the grilled sandwich. They were very tasty that way.

Fettuccine with Sweet Pepper-Cayenne Sauce

Reviewed: Aug. 5, 2009
This was quick and easy recipe for a week night or any busy day when you are in a jam to make something tasty and fast for supper. I used full fat sour cream and 1/2 cup chicken broth but I could've used the full 3/4 cup since I had to reduce my sauce more then the 5min mentioned to get the proper thickness.I used riccia pasta which look like skinny lasagna noodles and used a yellow and red pepper with onions. It was delish!

Oregano Cubed Potatoes

Reviewed: Jul. 27, 2009
Great base to work with when you want to try greek style potatoes. The only difference I made to the recipe was use some reviewers tips about using chicken broth. I followed the recipe for 8 servings (used 2.5lbs potato nuggets) and then added 3/4 cup chicken broth to the recipe and put the lid on and baked it for 50 minutes. The potatoes went fast! Thanks.

Grecian Pork Tenderloin

Reviewed: Jul. 27, 2009
Made this for 8 adults and it is great but I thought the oil and lemon juice quantities were a bit too much for me so for about 2.5 lbs of meat I used only 1 cup lemon and 3/4 cup olive oil.Used 1/4 cup dried oregano. This amount of marinade could have handled another pound of meat in my zipploc bag. I served it with oven baked greek style potato nuggets, Greek salad and had pitas on hand for those who wanted to do a sandwich with extra feta and home made Tzatziki. Most of my guests ate it this way after seeing a few of us doing so. The combined flavours made it a super special BBQ evening amongst family. Thanks for the inspiration!

Eclair Cake

Reviewed: May 26, 2009
Yes it is a sweet desert but what desert isn't especially those made with a lot of sweet ingredients to start?? Anyhow, it was delicious and adults and kids loved it.Only difference is that I used low fat honey graham crackers and 1/2 can vanilla frosting (all I had) and added 2 to 3 oz of melted baker's chocolate in the frosting then microwaved for 30 secs for spreadability. Its flavour reminded me of an eclair so this desert deserves it's name for sure.

Marinated Greek Chicken Kabobs

Nice tasty kebabs and very easy prep items. They were full of flavour on their own and the chicken was so tender it was awesome.I used 1.5lbs of chicken since the amount of marinade I had, could handle it.It made 8 long kebabs and all 7 adults and 3 kids enjoyed them.Recipe is a keeper thanks.

Italian Pasta Salad I

Great creamy pasta salad that can be made quickly if you forget to make it ahead of time.It has a nice flavour to start and if you have an hour or so before you eat your meal it can sit in the fridge and develop a bit more fullness in flavour.

Roasted Garlic and Eggplant Soup

Reviewed: May 7, 2009
This recipe was quite nice. The only changes I have done due to the lack of the correct amount of tomato paste and no half and half. I had only 1 tbsp of paste so I added about 1/2 of diced tomatoes with not too much juice. And subed the half half for milk with 1tbsp of cornstarch in it for thickening agent. The final result was quite good since I am not a big fan of eggplant.
