Absolutely Awesome BBQ Sauce

Apparently you must LOVE the taste of rum to like this BBQ sauce as that is the predominant flavor. My husband came into the kitchen and asked me what the smell was while the sauce was simmering. I assured him that the rum flavor would mellow and just add a complexity to the sauce (like when adding wine to a sauce), but I was wrong as it just tasted of rum in the end. I will have to keep searching for an awesome BBQ sauce, I guess.

Microwave Popcorn

Made this for the first time yesterday using olive oil but next time (and there will be many times) I will try without oil as some reviews state they have had success with that. I would rather add 1 tsp EVOO after it cooks for more flavor, if necessary. I will skip the salt in the bag as I had to add more afterward anyway. Lots of fiber, very filling, low fat (esp without the oil), made a ton, inexpensive, no chemicals or cardboard taste (like packaged micro popcorn), and no packaging in the landfill. No downside to this recipe! Total bag = 6 WW points made according to recipe

Caramel Peanut Fudge

Absolutely delicious and easy to make. I froze the bars after each step to make the preparation go faster. Tasted better than the real thing. The only slightly negative comment I have is that as the caramel layer warms up it gets soft and the top layer can slide off to the side if bars are not perfectly flat.

Easy and Elegant Pork Tenderloin

My husband used to complain that pork tenderloin was too dry until I found this recipe. This cooking method ensures moist pork every time. I have made this repeatedly with excellent results. I do have a problem with the bread crumb crust breaking off when the meat is cut but with the amount of oil added to make the crust maybe that's a good thing.

Baked Salmon II

First of all, let me say that I LOVE salmon and eat it about once/week, both for health reasons and I love the taste. I was looking for an alternate recipe as I didn't want my family to become bored with our favorite Salmon with Honey Mustard and Pecans found on this site. I had high hopes for this recipe with the many positive reviews but I was very disappointed. I feel that the herbs were very overpowering and didn't enhance the flavor of the fish. My family liked it a little more than I did but not as much as our favorite, which I will stick with.

Baked Dijon Salmon

Absolutely delicious! After the first time, I now omit the butter and make sure that the pecans are under the bread crumbs so that they don't burn. My entire family loves this and we eat it at least 2-3 times/month. Well, my 12 year old son doesn't LOVE it but at least he'll eat fish this way! Thanks for a delicious way to prepare healthy salmon.
