Oven Roasted Red Potatoes and Asparagus

Like others, I modified the recipe. I cut the spices to a generous sprinkling, upped the olive oil a little, and didn't add the asparagus until the last five minutes. It could have used a little garlic seasoning in addition to the cloves, something to coat the potatoes a bit more. Next time I might add some garlic salt in place of some of the kosher salt. Turned out well with the modifications. This was a good side dish for broiled grouper parmesan. Will make this again, with the same modifications!

Blackberry Cobbler

Not a traditional cobbler with a crust, but more of a coffee cake. Definitely delicious and extremely easy, though. I've made this several times, and dump in two pint containers of blackberries (washed) instead of just 3 1/2 cups as called for. My husband and father love it.

Bunny Cookies

I used salted butter instead of shortening and ommitted the orange zest, which I did not have. My 6-year-old daughter and I made these and rolled them out into different shapes using small plastic play-dough cutters, then baked them for 8 minutes They rolled out well without refrigeration and held their shape nicely during baking. We made a small batch and put the rest of the dough away for tomorrow. I can't review the taste, because my daughter ate them all while I was tidying up!

Mom's Oatmeal Blueberry Pancakes

The recipe was tasty, but I agree with those who said the batter was thin. I added a bit of baking powder to help it thicken up in the bowl. The pancakes did ultimately have a good consistency. I used old-fashioned rolled oats, and substituted low-fat milk for half of the buttermilk since I only had one cup of buttermilk left in the fridge. I wonder - did the original poster and some of the reviewers use quick-cooking rolled oats? That would absorb the liquid faster and possibly contribute to our wide differences.

Italian Nutthouse Broiled Tomatoes

I was in a hurry, so I deleted the MSG, substituted dried oregano for fresh, and used garlic salt. This was still the most delicious part of the meal. Very quick and easy.
