Garlic Parmesan Orzo

This was quick and easy and very tasty. I sauteed some shrimp and garlic in olive oil and then eyeballed the milk and parm cheese and pepper to taste. It was very good!

Spinach and Rice (Spanakorizo)

Very good. I followed the suggestion to saute the onions, garlic and rice together, then add the water. I used brown rice and it took quite a while to cook. Used 1 tablespoon of tomato paste instead of the can of sauce and replaced the dill and parsley with oregano and greek seasoning. Added feta and lemon juice to taste. My 3 year old cleaned her plate!

very good. only used 2 eggs after reading the reviews and used some more salt and olive oil and left the dill out b/c I didn't have any. I made a square pie versus the triangles to save some time on the prep.

Baked French Toast

This was easy to make and the family enjoyed it. Used challah bread, cut down the liquid to 6 eggs, 1 and a quarter cups of milk and 1 cup 1/2 and 1/2. I baked it as is for 20 minutes, then poured the syrup on top (i only used 1 stick of butter and 1 cup of brown sugar and 2T corn syrup). Baked it for 20 more min. It wasn't as soggy this way.

Iced Pumpkin Cookies

These were really good! For some reason I was craving pumpkin the day after Thanksgiving and wanted to try something different. I only had 1/2 cup of white sugar so used 1 cup of light brown. I also used 2t of pumpkin pie spice in place of the 1/2t nutmeg and 1/2 cloves. I didn't ice these and my kids (and myself) gobbled these up.

Shrimp Fried Rice II

This was good. Made some changes based on what I had at home. Carrots, peas and garlic added as my veggies, used my brown basmati rice and eyeballed the soy and sesame oil to taste. I thought it was very good.

Smothered Mexican Lasagna

This was easy to make and quite good. I added a can of rotel with lime and cilantro to my meat and also added some of the taco seasoning to the ricotta mixture. Next time I'll add black beans and corn. My kids ate it so I was pleased. I didn't use as much water as called for, just eyeballed it and didn't use the onions either.

Spinach Muenster Quiche

This was very good and easy to make. I used a 16oz pkg of spinach, 3 eggs, lots of garlic, used a block of low-fat cream cheese, and also added some feta. I topped it with cheddar b/c that's all I had. I only gave it 4 stars b/c it seems more dip-like than main-course like and my kids, who like everything in it, didn't like it. But really, what's not to like? Fat, fat, more fat and spinach. I wanted to add that caused my husband and I GI distress digesting all the spinach and cheese. It was so good to eat, but not sure it was worth the stomach pains/gas it caused.

Black Bean Vegetable Soup

This was quick and easy to make. I needed to add additional seasonings (salt, more cumin, etc) as my blackbeans and tomatoes were all no salt added, making the dish somewhat bland. I also used 1 cup less broth per other reviews. We topped it with cheese and sour cream and it was very good.

Chinese Shrimp and Tofu Soup

This was wonderful! I used more garlic, shrimp and tofu and omitted the ginger (we're not fans). I cooked the shrimp and garlic in sesame oil and used soy sauce to add flavor to the soup. I didn't have any peas so used some corn and spinach. It was restaurant quality!

Vegetarian Four Cheese Lasagna

My husband I thought this was great and he's not a fan of eggplant or sweet potatoes. So yes, subbed sweet potatoes for the pumpkin, used lasagna noodles, canned fire roasted tomatoes and homemade pesto. It was so flavorful. My husband had to add salt, but I thought it was fine without. I only wished my kids would have enjoyed it more. We're trying to eat less meat here so I'm sure I'll make this again.

German Apple Cake I

I made this in a bundt pan and increased cooking time by 15 min. I used 1/2 oil (olive) and 1/2 applesauce. I also decreased the sugar by 1/2 cup and used 1/2 brown and 1/2 white. My family of 4 finished it in just over 24 hours. Very moist.

Creamy Italian White Bean Soup

This was great. My kids didn't eat it, but I was expecting that. I used water and beef bullion (only had 1 can of chicken stock) instead of the 2 cups of water. I also added more garlic, rosemary, no celery and used frozen spinach and added frozen broccoli as well. Ate it with buttered bread. I will make this again.

Oven Brown Rice

After 1.5 hours in the oven, this was still crunchy! I then added over 2 more cups of broth and microwaved it for over 20 more minutes before it was edible. Once cooked, it was very good, but everyone was done with dinner before it was even close to being ready. I used organic brown jasmine rice.

Quinoa and Black Beans

This was very good. My kids did not enjoy it, but my husband and I devoured it. I used only 1 can of beans, used chicken broth, omitted the onion and cilantro (didn't have any) and added some lemon juice and oregano. Very versatile dish.

The Best Chicken Fried Steak

This was good. I agree with the other reviewers that the meat does need to be seasoned. I did season the flour and I'm glad I did, but the meat was still lacking. I fried in olive oil and not shortening (as I only use olive oil) and used milk + lemon juice instead of buttermilk; otherwise, made as written. The gravy was tasty with the addition of salt and pepper.
