Apple Crisp II

I doubled the topping and put some of it on the bottom per other reviews. I didn't add the water either and next time i'll use much less sugar. It was too sweet for me overall. Otherwise, very good.

Mom's Coleslaw

Very good and easy! I got a small head of cabbage and carrots in my CSA so decided to try to make coleslaw for the first time. Very good. I eyeballed the sauce ingredients and added salt and pepper. It's great!

Southern Turnip Supreme

I can't say this was bitter, but we just didn't like it. It was the first time any of us had had turnips. Maybe it's just a flavor we don't appreciate?

Baked Kale Chips

Good way to prepare Kale. Just don't eat too many or your stomach will be mad at you. You also have to find the proper balance with the salt....too much is overkill but too little makes them a tad bitter.

Brownie Biscotti

WONDERFUL! I forgot the last step (egg yolk/water) and left out the nuts and these are great! Very easy to make and so good dipped in my home-brewed latte!

Smothered Bacon Chicken

Very good, everyone loved it! (what's not to love?!) I used boneless/skinless thighs, topped it with bacon and then I mixed up my own cream of mushroom since I don't buy it in a can. I sauteed baby bellas in butter, added flour to make a roux and then milk. I mixed that with the sour cream and topped the chicken. Baked it as directed. Very flavorful!

Spaghetti Pie III

Good and easy to make. I mixed the cream cheese and sour cream in with the pasta and threw in some parm cheese then topped with the sauce and then moz cheese. Baked 1 hr, uncovered last 20 minutes. Everyone liked it.

Mushroom Orzo

Very quick and easy. I used 1.5 cups of chicken broth instead of water and wine. I also used about 1/4 onion, chopped instead of the pearl onions. I used baby bellas and less butter than called for (2TBS for onions, then added 4 more, 2 at a time while I sauteed the mushrooms and orzo). Everyone ate it (i'm lucky, my kids love mushrooms). I served it as a main dish with french green beans on the side.

Chicken With Mushrooms

We LOVE this at my house. I saute mushrooms and 1/2 a chopped onion in some oil, adding garlic in the end. Then I transfer to a dish and brown my chicken (just dredged in some seasoned flour). I then remove the chicken, deglaze with the broth and then add it all back in, cover and throw in the oven for 30 minutes. I top it with shredded mozzarella after taking it out, put the lid back on for a few and then mix it all together. Serve with buttered noodles. My kids love it and gobble it up. Son (6) had 3 helpings tonight!

Basil Tomato Soup

love this. so easy. I use 1/2 and 1/2 instead of cream but otherwise follow recipe, adding salt and pepper to taste. No need to buy canned tomato soup anymore!

Spinach and Mushroom Quesadillas

Very, very good and easy. Entire family (kids ages 4 and 6) gobbled them up. Used baby bellas, frozen spinach and mexican cheese mix. No oil necessary to pan fry them and dipped them in a bit of sour cream.

Tex-Mex Quinoa Salad

This was just ok, served it warm, with tortillas. I still haven't found a recipe made with quiona that just knocks my socks off...I'll keep looking. Edited and added a star. I stored the leftovers in the fridge and it was much better reheated a day later. It was overly runny when I first made it, but reaheated, it had a much better consistency. Still unsure if I'll make it again as my kids didn't really dig it.

Apple Raisin French Toast Strata

Very good. Not soggy at all. I did 6 eggs, added vanilla to the egg mixture. I also creamed the cheese with some sugar and cinnamon per other reviews and spread this on the bread before cubing it. I baked it at 350 for an hour and it was perfect! Wonderful xmas morning breakfast, I made it yesterday and it sat in the fridge for over 16 hours before I baked it this morning.

Roasted Brussels Sprouts

Rich Italian Sausage and Potato Soup

Very good soup. I subbed bacon for the pancetta (and more then was called) and spinach for the kale. I loved it. Topped it with parm cheese. My kids thought it was just ok. Husband enjoyed it.

Chicken Breasts in Caper Cream Sauce

This was decent. I dredged boneless/skinless thighs in seasoned flour (seasoned with lemon pepper, salt and thyme as I had no dill). I then pan fried these in a little olive oil and then followed the sauce recipe as written (doubling it) except only putting in 1T of capers (had never had a caper before and wasn't sure we'd enjoy them). My kids didn't like the capers, but I thought they were nice with the sauce, giving it a nice salty flavor. Otherwise, to be honest, it was just pan fried chicken with a basic creme-based sauce. Nothing overly fancy or special. The lemon-pepper didn't stick out to me at all. Don't get me wrong, it was good.
