Old Fashioned Paradise Pumpkin Pie

This was really, really good!! I did make more, thicker cheesecake layer, as per other reviews, and cooled it as well before the pumpkin layer. I found the pumpkin to be quite runny, but it turned out awesome, and doubled the streusal, as that is what the recipe and the picture are. The recipe even made enough for 3 eight inch pies, as that is all I have. Will definitely be making again and again!!

Mom's Zucchini Bread

Thses were sooo easy to make, and taste great!! I followed other reviews, and used 2 cups all purpose flour, 1 cup whole wheat flour, 3 cups zucchini, 1 cup brown & 3/4 cup white sugars, 1/2 cup both oil and applesauce and 1/2 tsp less of cinnamon. I had lots of zucchini to use, so I ended up with two batches (second batch as loaves is in the oven as we speak). The first batch I added some mini semi sweet chocolate chips to and made mini loaves (cooked about 25 mins), and the second batch has the chips and chpd pecans in it (cooking time to be determined). Had to make some nut free for the kids to take to school. The true test will be my husband. If I can get him to eat one, I know he'll like it. He's one that believes vegetables shouldn't be used for muffins and such!! LOL Will definitely use this recipe again!!

Banana Oat Muffins

Wow!! These are really good!! My family is going to love them. I am always looking for a good oatmeal recipe for my kids. Now, I had planned on doing the recipe as is, but it seems as though I wasn't prepared to do any baking today!! I didn't realize that I was out of so many things. So I had to improvise. I did double the recipe. My brown sugar was hard, so I heated to loosen, (I think I got a cup out of it) with a 1/4 cup of white. Used 1 cup each of white and whole wheat, with some wheat germ (1/2 cup) as well. Used spiced rum instead of vanilla. This one is the best...Had only 1/4 of oats, (really thought I had more) so I strained all the sugars out of about 6 packets of instant oatmeal. 2 being multigrain ones. I also used about 9 banana's (5 of which were smaller), as I love having lots of flavour. I didn't add nuts--kids can't take them to school, but topped each one off with some chocolate chips, instead of using the crumb mixture. These again were awesome...and BTW...Everything else I did have...lol

Can't Leave Alone Bars

I haven't made this exact recipe, but I have made something like it. In the mix I added 1 cup mini choco chips & 1 cup toffee pieces. Instead of using chocolate as the "filling", melt together the butter, the milk and 35 peeled caramels!! Pour on top of the base, spread, top with the rest of the cake mix, and bake....OMG...these you can't leave alone! Try them, trust me!!

Freezer Caramel Drizzle Pie

My mother in law made this the other day, as she had gotten the recipe from her daughter. This makes enough filling to do 2 ready made crusts, but you have to do more of the coconut/pecan mix for them. Or it can make one 9 inch glass deep dish make your own crust, as she had done! This way makes for a bigger, deeper nicer looking pie!! I did cut back on the butter for the coconut/pecan mix, and used both light cream cheese/cool whip, and I used unsweetned coconut and made my own crusts. Took it into work and got rave reviews...had to write out the recipe then and there for everyone. Was awesome!!

Frozen Coconut Caramel Pie

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

So far so good! The house smells amazing...I doubled the recipe, and was able to make 16 mini loaves, and 24 mini muffins. I like the chunks of fruit, so I didn't puree the bananas or strawberries. I did use the vanilla yogurt instead of applesauce, and added 1 cup of oatmeal. I also topped them of with a crumb topping. These are really good, but even with both fruits, it seems to lack a tiny bit in flavor!!!! The family will love these when they wake up tomorrow morning, though...:)***and they did...lol***

Busy Day Chicken Rice Casserole

I know this recipe as "Chicken Don't Peek"!! The best to use is bone-in chicken pieces-breasts and thighs work best. I use 3 cans of mushroom soup, with 1 3/4 cans of water poured around the chicken, to 2 cups of rice. I bake it in a greased roaster pan with lid. RESIST the urge to check on it!! Keep the oven closed for the entire time! I also increase the cooking time by about 15 mins. The rice is creamy, and the chicken is moist. If only they could make a reduced salt, onion soup mix!!

Never Fail Applesauce Spice Cake

I was looking for something that I could use for a Pumpkin/Mousse Spice cake. So instead of using apple sauce, I used pumpkin puree, and 1 3/4 tsp of pumpkin pie spice, but everything else was the same (didn't add nuts or raisins...Will next time). The cake had an awesome flavor but was quite dense. I had to use a 9x13 pan (couldn't find my round pans), when cooled, cut in half, and then cut the others to make a layer cake with a pumpkin mousse in between, and topped with a cream cheese icing and then toasted pecans. This was awesome!!!!!

Cream Cheese Frosting II

I only made half of the recipe, but probably should've done the full recipe. However, on the half...I did have to use 1 1/2 cups of icing sugar, and instead of vanilla, I used Spiced Rum...MMMMMMM, it was good!! Used it to ice a Pumpkin Spice Cake.....Everyone loved it!!

Fluffy Whole Wheat Biscuits

These were pretty good. Very quick, but lacked a little in flavor, however everyone can change it to their own tastes. I made 1 1/2 of the recipe, using 1 3/4 cups whole wheat flour, and 1 1/4 bread flour. Added in some triple cheddar shredded cheese but maybe not enough. Also, didn't roll them out but made them drop biscuits. Everyone loved them, but again still needed more flavor. Will make again for sure!! ****Made again the other night, doubled the recipe and they were awesome!! I added more shredded cheese, chopped garlic and some italian seasoning. They went over so much better than the first batch. They were so light and tasty!!***

Old-Fashioned Rice Pudding II

This was the recipe I was looking for. Growing up, my mom made a baked rice pudding all the time, and over the last 20 years, since she died I have been looking for the recipe!! This recipe was close, but not quite it. I followed the recipe exactly, and it took 3 hours at 300 to cook to be thicker. When my mom made it she had to make it for 6 kids and my two parents, so the recipe was doubled. The best bet, that I am going to try next time is 1/2 cup of rice to the quart of milk...add in some raisins, and the teaspoon of cinnamon. Everything else is good. Stir it every so often for the first hour and wait for the top to brown...mmmmmmmmm!!

Quick and Easy Pizza Crust

This is awesome! For my first time making this, it turned out beautifully. I did add an extra 1 1/2 tsp of sugar, but I doubled the recipe. I also added some parm cheese, and italian seasoning to the crust before baking it. Out of the doubled recipe I was able to make 2 individual sized pizza for the kids, and 2 cookie sized (a little thinner crusted) pans. The bigger ones, I baked the crusts for a few minutes before adding the toppings. A big hit here...will be making it again!!

Carrot Cupcakes with White Chocolate Cream Cheese Icing

The cupcakes turned out really nice and moist. I am still going to look for a recipe that doesn't include pineapple. Even though I didn't tell my son what was in it, he found it!! I used the bourbon icing for these, as I didn't have all the ingredients for it. Overall though, again they were nice.

Bourbon Cream Cheese Frosting

This was okay! Nothing spectacular about it. I followed the recipe to a "T", until I realized that I didn't have the bourbon!! I used spiced rum instead but still found that it was kind if runny. That flavor was interesting though, but good one the carrot cupcake recipe!!!

Best Big, Fat, Chewy Chocolate Chip Cookie

This is an update! Sept.8/09. These are even better with what I tweaked. Only cause I wanted to try something different. I normally follow the directions but today, I used 2 eggs, cut the flour back to 1 1/2 cups, the white sugar to 1/3 of a cup, and salt to 1/4 tsp, and added 1 cup quick oats, with 1/2 cup semi-sweet & butterscotch chips, as well as 1 cup mini M&M's and a shot of FIREBALL! Baked them on parchment lined sheet for about 10-11 mins, and they are fabulous! Seriously flavored, chewy and crunchy around the edges! My kids came home from school, on their first day back, and devoured them!!

My Crab Cakes

I hope that it was just me, but I didn't care for these. My husband liked them though. I used a 15 oz can of crab, so I tripled the rest of the ingredients except the Old Bay. I think I made the cakes too big, but otherwise did everything else right. I fried them in some oil with butter, but I just couldn't get past the texture, probably due to the size. I only made them for my hubby's birthday, but I don't know if I'll do them again...but that is because of my own tastes!

Restaurant-Style Buffalo Chicken Wings

Just tried these tonight, as I had bought wings at Costco the other day. I didn't measure the dry ingredients, just kind of wing'd it (Sorry had to...lol) due to the fact that the size of the package of wings was obviously big! I did add the garlic powder to the flour, not the sauce, and waited about 90 mins before frying them. These were awesome, as per my 6 yr old, and my husband, who got called to work, and called on his way in, that we better save him some more! I kind of screwed up the sauce, by adding more butter than Frank's Red Hot sauce. Too salty as per my husband. However, I did use a (no-name--loblaws brand) dry rib garlic sauce that I found in the grocery store, that was thicker than the VH sauces, that was amazing!! Tasted like honey garlic, but without the sweetness. Now the downside was my fryer, only held about 8 wings, but it only took about 15 mins to do each batch...however, it about 7 batches or more to do them all. Will definitely make them again!!!

Ultimate Irresistible Granola

I just used this as an example of what I needed to do, in order to make granola. Omitted the walnuts, but added wheat germ, and grd flax seed, and added the raisins at the beginning. I found the cooking time to be way off as was the temperature. I had my oven at 250 degrees and found that it was done in 30 mins, stirring every 10 mins, and in 2 batches. Also, I used half of a honey butter (has cinnamon in it)that I had in the fridge (330 grams was the container size). I decided to add another 1/4 cup of amber honey with a couple of tbsps of canola oil. The finished product, is amazing. I can't stop eating it, and neither can my son!!!

Peanut Butter Marshmallow Squares

These are the best!! I have been eating these since I was a kid, some 30 yrs ago!! I do not add the coconut as not everyone likes it, but I do use crunchy peanut butter, but a good kind, like Jif or Kraft. These are a big hit whenever I make them...even my 5 yr old who doesn't honestly like sweet things, eats them. Yes, you could take a spoonful of each, but it wouldn't be the right consistency...These are soo good!!!
