Fluffy Pancakes with Wheat Germ and Applesauce

Reviewed: Oct. 15, 2011
I will not be making these agin. They ended up tasting OK and we did enjoy them. So here's why I will not be making these and simply cannot recommend the recipe; 1) the amount of dry to liquid were completely off; I at least doubled the milk its one thing to need to add a splash or two but to have to double the amount is an error in the recipe. 2) It completely lacks seasoning, we added cinnamon, nutmeg, salt and vanilla and they were still on the bland side of flavor (and I like whole wheat/'healthy' food so its not that I'm not used to eating more grainy food). 3) the need for two bowls and beating the egg whites, I figured I would give the recipe a shot but even with the 'soft peaks' added the pancakes were pretty dense, that combined with the additional work is unnecessary. There are some good recipes for wholesome, filling, and yummy pancakes so I just can't be bothered to re-use this one again with the extra work and dishes for a lackluster result. I don't regret trying them but they won't be a repeat. Sorry.

Whole Wheat Beer Bread

Reviewed: Oct. 12, 2011
This was great! I used Blue Moon and added the butter to the top (probably will use 1-2T instead of 1/4C next time). Its an easy recipe that is delish, it would be great with any meal or snacks and it can be easily adapted. We'll be trying it with some diced apples and cinnamon as well. It is fantastic as written so go preheat your oven.

Buttery Soft Pretzels

Reviewed: Sep. 25, 2011
I followed this as written with one change (olive oil instead of veg) and the pretzels were great! Do not skip the baking soda water dip, it is what really makes the pretzel and adds the flavor. I also made two pretzel dogs (like the mall places) just wrapped the rope around a slightly warmed hot dog. They were good, just make sure the rope is thin or it overpowers the dog. Thanks for sharing this Christa!!

Good Old Fashioned Pancakes

Reviewed: Aug. 13, 2011
I made this as written with just adding some vanilla to the egg mixture. I mixed these as I do my other pancakes/waffles, I sifted the dry ingredients and let the eggs and milk come to room temp. When I combined the eggs and butter I emulsified them with a whisk then added the milk and vanilla. Once the dry and wet are combined I mix them lightly with a spatula (kind of folding them together) once they are somewhat combined I let them rest for a couple minutes and then give a quick mix. The key is not over mixing the batter, get it combined (with lumps) let it rest and then a quick blend, this results in a light airy pancakes that melts in your mouth. These are great!!

Spinach Quiche

Reviewed: Jul. 18, 2011
This is a great recipe! I made it as written and with artichoke hearts and garlic added, both were delish. I did use panko bread crumbs instead of the croutons, because of what I had on hand, a lighter option but I don't think they made a significant taste/texture difference. Going forward I'll keep the change/addition of the panko and garlic.

Fast. Easy. Yummm. The only change I made was to add a little extra water.

Puff pastry and sugar, how can you go wrong? These came out great, I did add some cinnamon and did not flip them while baking. These were super easy and fast to make and even faster to eat. :-)

Authentic Mexican Tortillas

Reviewed: Feb. 28, 2011
These are not very authentic. As written they taste more like salty pie crust, there is simply too much shortening. Other recipes with a cup or more flour use less then half the shortening (but more water). On the plus side, they were very easy to roll out. But there are better options available.

Bourbon-Mango Pulled Pork

Reviewed: Dec. 6, 2010
This is AMAZING! So easy, so yummy. I could go on and on about it. The first time I made this I used pork loin, it came out OK but not anywhere near as good as the second time I made it, using the shoulder/butt cut. My second time I doubled the recipe and froze the leftovers, they are getting better and better!! Try this you won't be disappointed.

Chocolate Butter-Creme Frosting

Reviewed: Oct. 30, 2010
Yum! I use this regularly as is but most recently I used it to help me get to a rich red color for my daughter's birthday cupcakes. It worked wonderfully!! The frosting alone tastes fantastic and the chocolate aided in the coloring process.

We enjoyed this quite a bit. I need to play with the crust a bit because mine seems a little soggy but the flavors otherwise were great!

Pumpkin Pancakes

Reviewed: Oct. 30, 2010
This is a great fall breakfast. I made a couple small tweaks to suit our taste, extra spices and pumpkin. I'll definitely be making these again. I might make the batter ahead of time to let the flavors develop more. Pumpkin pie is always better the next day so perhaps the same is true for these. I don't understand the negative comments about a lack of flavor. These had a nice fall flavor and pancakes are not typically loaded with flavor. These are worth trying and make sure to use real maple syrup! Thanks Ruth.

Whole Wheat Zucchini Bread

Reviewed: Sep. 20, 2010
We enjoyed this bread. Its not too sweet and has a nice heartiness from the wheat flour. I used 50/50 wheat and all purpose flour and added a little extra zucchini. I like having extra bread to share with friends/neighbors.

Crumb-Coated Chicken Thighs

Reviewed: Jun. 16, 2010
Our family really liked this recipe. Other than using panko bread crumbs I made this as written. The spices were so yummy, nicely balanced (not too hot but a nice spice with great flavor) and I like the crisp of the panko crumbs. Going forward I'll use this breading on our chicken tenders too. Lastly both my kids (2.5 y and 11 mo) ate up the chicken and loved it!

Classic Bran Muffins

Reviewed: Jun. 14, 2010
This is a good basic bran muffin. The recipe as it is is good, not too sweet but very nice and hearty. This makes it stick with you and prevent hunger from coming up better than some other recipes. Some of the changes that I will make are (at another reviewer's suggestion) swap 1/3 C. brown sug for 1/3 C. molasses, I use whole wheat flour in place of all purpose and craisins are great as well as raisins. I want to try adding some ground flax seed for some extra protein.

Seven Layer Bars

Reviewed: May 29, 2010
These are addicting. I've made them several times with the only change being that I use pecans instead of walnuts. They are great! I haven't really had a problem with them sticking but I always use my stoneware bar pan and it is well seasoned so that might make the difference. If I was using a metal/glass pan I would probably use parchment paper on the bottom. Give them a try, they're simple, fast and super tasty (just be sure to let them cool well). Thanks for sharing Patty.

Raspberry-Glazed Rosemary Chicken

Reviewed: Feb. 2, 2010
This is an easy and tasty dish. My whole family enjoyed it. I made a couple minor changes due to what I had on hand and other things baking. I use dijon mustard instead of honey mustard (we liked it, and will keep that change); the rosemary and sage were fresh; and I prepared this on the stovetop. To cook I used less than a T of grapeseed oil cooked the chicken in a large skillet. When the chicken was cooked I used the broth to deglaze the pan and added the jam mixture. I allowed this to simmer and reduce until it coated the back of a spoon. I then returned the chicken to the pan and simmered for a few minutes to coat the chicken. I will probably keep with this style of prep, it took about 20 to cook that way and we really enjoyed it.
