Bahama-Mama Pork Chops

This was good, it didn't amaze us but it has a nice blend of flavors. I did have to make a couple changes because of what I had on hand (or didn't have). I used craisins instead of raisins, and some rum for part of the chili sauce. Also I added way too much pineapple since I realized the can was larger than called for after they were added. It still came out fine and we'll make it again. I served it over coconut brown rice (rice made w/ coconut milk), great combo of sweet n spicy.

Grandmother's Buttermilk Cornbread

I made this as directed with a couple exceptions. I used my cast iron pan and let the batter less the salt and flour set while the oven/pan were preheating. I melted some lard (yes lard, its great for pie crusts) in the pan then added the batter. Also I melted the butter in a glass bowl in the microwave and then added remaining ingredients as called for in the bowl, instead of using skillet on stove top and mixing in skillet. The end result is a super yummy bread that is moist and well balanced, just enough sweetness. This is a more NE style corn bread, not southern. But don't let that stop you, its easy and great with BBQ, chili, breakfast, just about anything.

Amish Breakfast Casserole

I really liked this recipe. Brought it to a brunch and it was enjoyed by all. I followed some suggestions and added more eggs (10 in total) and shredded my own potatoes (not much work considering the savings, it was 2 large potatoes). I used veggie breakfast sausages and would probably add a little salt if making it vegetarian but if using bacon, ham or meat sausage it would be fine. I assembled the night before and baked in the AM, next time I would bake at night and just warm in the oven in the AM.

Breakfast Quiches to Go

This is a great recipe, very simple and tasty. It was gone very quickly!! That said I did make some changes to suit my needs, I was bringing this to a mom's brunch and wanted to get more servings. So I put the rolls onto the bottom of a 9x13 casserole and put the eggs on top. I used 3 add'l eggs simply because of using the casserole. As the casserole I baked this for about 30 mins. Probably the only change that I would make regardless of size is to saute the onions before putting them into the egg mixture.

Holiday Punch I

This was great. I made it with lemonade and with pineapple juice and I prefer the pineapple juice. When made with 100% juice pineapple, cranberry and orange juice it has much less sugar. I floated cranberries instead of the cherries. Made an ice ring with cranberries and mint leave, it looked very festive and tasted wonderful!!

Vanilla Crepes

This is a great basic crepe recipe. It is a little more thick than a crepe you would get in France or at a French bistro but its easy and yummy!! I also used 3 whole eggs and went a little scant on the flour. I cooked them in a large skillet because we don't have a crepe pan.

Amazing Whole Wheat Pizza Crust

This is a good basic wheat crust. I followed the recipe with one exception, instead of using all purpose flour I used bread flour. The dough is very easy to manipulate into the shape you want and we always have bunches of leftovers since the whole wheat makes it more filling. One tip for rising, I live in an old house that is on the cool side so I use my oven to help the dougn rise; while mixing the dough I warm the oven then turn it off let it cool a littleso its warmer than room temp and then put the dough inside the warm(ish) oven; I've also used a cabinet with another bowl filled with hot/warm water. Both provide a warmer than room temp for rising (but not hot enough to cook at all) since bread rises best at 75-85*F.

Stuffed Acorn Squash Supreme

This was pretty yummy. I am rating 4 stars because I think the broccoli/cheese rice mix raises the calories, fat and sodium needlessly. Like others I baked the squash pre and post stuffing. I used brown rice instead of the mix and added steamed broccoli and cauliflower and used gruyer cheese (it was what I had on hand). It was good, my 14 mo. old enjoyed it too. We did have extra filling and just used it as a rice salad.

Salmon Marinade

This is a yummy marinade. I was a little nervous about the worcestershire sauce but it was great. The lime is so good with the salmon. Definitely worth a try, but this is a keeper for us!!

Fruit Salad in Seconds

This is yummy and easy (it could be better with a little more work though that's not the point or the recipe). Also adding some citrus, oranges, grapefruit, etc will help lengthen the life of the bananas, or just add a splash of OJ to the mixture.

Cow Pies

This is so yummy. Perfect for that chocolate craving they have a nice crunch and chew and sweet/tangy. I used dark chocolate instead of milk, dried cranberries instead of raisins and the butter flavored shortening (they were all what I had on hand). They turned out wonderfully, the butter shortening actually added a nice subtle depth of flavor. Anyway, these totally took care of my chocolate craving!!

Scrumptious Strawberry Shortcake

This recipe was really good, it had a light, buttery, flakey texture. I used my food processor to mix everything and had to use a little whole wheat flour when I ran out of white, sometimes that can make it more dry but that was not a problem at all. I did not have a problem with tasting the BP or the Cream of tartar. I lessened both the first time I made them and the second followed the recipe exactly the second round were more puffy. Both the BP and Cream of tartar are rising agents changing the amount will affect how much the shortcake will rise. This is a simple recipe for a simple but beautiful dessert!!
