Upside-Down Apple Pecan Pie

This made a really great pie! I loved the pecan "topping" that ended up drizzled over the pie. The use of Granny Smith's wouldn't be my choice next time though - I might use my "typical" blend of apples next time.

Outrageous Chocolate Chip Cookies

Chocolate Oatmeal Cookies

This recipe was great. I did use butter instead of margarine and tried to up the health factor by using half all-purpose flour and half whole wheat flour. I had to add in a little more butter to offset (1.5 T) the dryness - but these were great cookies that I will make again! Also added white chocolate chips.

Four-Grain Bread

This bread was absolutely wonderful. I made it to accompany a stew this weekend and my guests loved it so much, I made another loaf for them to take home! One thing I tried, as I was making the bread as soon as I put the ingredients in the machine, was to mix the water, honey, and yeast first and let it "do its work" while I mixed the flours - as you would do if you were making traditional bread. The first loaf came out with a great texture - the second one looked a bit more dense - but I can't say for sure - as it wasn't cut into at my house!

Moist, Tender Spice Cake: Gingerbread Variation

Definitely a great recipe. It was very flavorful and moist and was great with a bit of whipped cream. I would probably opt for a bit "healthier" gingerbread recipe if it were just for me and my husband, but for guests - this is the way to go!

Dutch Apple Berry Pie

This recipe was GREAT! My pie plate was a little bigger, so I did add a LOT more apples to the pie (I think it was 6 in total) and I used about a cup of each of the berries. I added the oats, as per other reviewers, but I think it would have worked out either way! Cooked it a bit longer, 45-50 min. I will definitely make again!

Nutty Pumpkin Waffles

Great recipe - but the highlight is the pumpkin syrup recipe at the end! While I will make the whole recipe again - I will probably make that sauce to go over other waffles too. The pumpkin adds not only flavor - but nutritional value to the syrup and cuts calories!

Pumpkin Cookies VI

I liked these cookies better than my husband. I added more oats and spices as per other readers and made them into bar cookies (no time for regular cookies). I really enjoyed the flavor and I added craisins and white chocolate chips!

Pumpkin and Sausage Soup

I did make a few changes to this recipe, due to diet and what was on hand. I used spicy italian turkey sausage, skim milk (thickened with a little cornstarch), and no butter. I still thought it was really good and would serve it to guests. I may, however, consider what other spices I could add to liven it up. Then again - if I served it to guests, I'd probably add the cream and butter - which may do it!

This was a really good, easy recipe and very easy on the clean up too! There are a lot of flavors in this, and I would be tempted (if I had more time next time) to let everything simmer together for a little while. I used extra lean ground beef and turkey sausages and next time, I think I'll try ground turkey as well - the healthier the better!

Great! As per other reviewers, I made extra crisp for the top (maybe an extra half recipe) and I probably could have made it as per the recipe. FYI - I used 4 apples, as many people weren't sure how many apples was 2 lbs.

Pumpkin Turkey Chili

This was good - but nothing outstanding. I tried to make as per recipe - but it was too tame. After I added spices as per other reviewers, it was pretty good. However, I'm not sure what I gained by adding pumpkin instead of standard tomato base. Would make again if I wanted to get rid of some pumpkin - but there are so many other great pumpkin recipes to use puree in!

Spicy Cilantro Dressing

This was excellent, but I must say I ran out of jalapenos so I just added some chipotle powder and cayenne instead. I used low fat SC and mayo too. Served this over a grilled steak salad and it was wonderful. I can't wait to try it with the fresh jalapenos!

Grilled Mahi Mahi

Scaled this recipe down for a dinner for two and it came out great. I had fresh tomatoes and jalapenos on hand - so I used those instead of canned - and it was great. I added some basil to the mix - and I would probably add a bit of a spice again. Also - forgot to add the cheese - and didn't miss it at all - but would like to try next time!

Raisin Sour Cream Bars

My husband loves sour cream raisin pie, and I thought this might be an easier alternative for summer enjoyment! I added 1/2 t. of nutmeg, as that's what is in his mother's pie recipe in addition to the cinnamon. I also replaced 1/2 cup of the flour with whole wheat flour. I might suggest baking the bottom layer for a few minutes before pouring on the cooked mixture and adding the topping. I do this with another oatmeal bar recipe I make - and it gives it a bit firmer bottom. This recipe also seemed a bit dense at first - but it seemed to lighten after a day or two! Will definitely make again.

Banana Chocolate Chip Cookies

I made these exactly as written, except for baking time and temp. I made them into bar cookies - and while they were good - they weren't great. Next time - I think I will try substituting brown sugar for the sugar and maybe using a bit more vanilla. Very banana-y and good - just needed a little something else. I'm a big peanut butter fan, so I may even try adding in some PB instead of some of the butter...
